Well... I'd sent a personal note already to Jewel thanking her for posting the absolutely delish slow-cooker "mushroom stroganoff" recipe back in March.... and now that I'm munching on the leftovers, I felt I just HAD to share the review with all of you.

This is a really good one - in case you missed it on her first post.

***Mushroom Stroganoff***

1 Chuck Roast, 3 lbs, cubed in 1" cubes
1 large onion, chopped
4 stalks celery, chopped
2 TBS bottled minced garlic (or 6-8 cloves)
3 cans Reduced Fat Cream of Mushroom Soup
1 envelope Lipton Onion Soup Mix
1/4 tsp salt
1/2 tsp black pepper
4 cups No Yolk Egg Noodles, cooked

1. Mix onions, celery, garlic, soups, salt and pepper together in crockpot, stir in beef cubes to coat thoroughly. Cook on low 8-9 hours or until meat is tender. Serve over cooked egg noodles.

When this is cooking, when I come home from work, every stray dog in the neighborhood is on my porch! The aroma can be smelled in the driveway. Leftovers heat well in the microwave too! Hubby tortures his co-workers the next day with this one!

Thanks for the post Holly, and thanks to Jewel for the original post. I actually was looking at my slow cooker/crock pot today and wondering what I could make in it in the near future. I have only used it once since I ordered it from QVC or HSN almost a year ago. I have been telling myself that I will use it more this fall and winter.

How many does this serve? I haven't ever used a crock pot because only DH and the 2 kids eat meat and the recipes always make so much. It is possible to cut down the size ? How long would you cook a smaller piece of meat -or doesn't it matter?

Thank you Holly for the kind review!! EWatkins, serving size depends on the people you're serving! ;) Any leftovers microwave VERY well, and DH is constantly calling dibs on the stuff to take to lunch. I've made this recipe with a 2 lb roast also, and it always turns out wonderfully. Doesn't make a whole lot of difference with cooking times either! Modify the onion and garlic to your personal taste with less beef, but don't alter the amount of soup, garlic, or the Onion Soup Mix.

The only thing I KINDA do different now is I will use two cans of reduced-fat Cream of Mushroom and one can of reduced-fat Cream of Celery. I add two cans in the beginning with the beef cubes and all the rest, and then after cooking I will pour out about 1-2 cups of the liquid from the crockpot (reserve for some future use) and add the last can of Cream of Mushroom and heat it through. Helps it become a bit creamier, since cooking all day can really water-down that broth!

You know how it is...you gotta play with these recipes once in awhile and change 'em around! :p DH and I really like the addition of the Cream of Celery soup, and also saving one can of soup for the final half hour or so! Makes it more like a stroganoff! Enjoy! :D
