View Full Version : Fresh Rosemary--what to do with it?

I bought a little bag of fresh rosemary at the farmer's market this weekend without any real plans in mind for it--it just looked interesting! Do any of you have any favorite uses for it?
Also, how long do you think it will keep in the fridge? We are going out of town for the weekend and I need to know if I need to use it up before we leave--I'd hate to waste it.

Oh, I do love rosemary.

It's pretty durable, too, so it should be find (although not at its peak) in your fridge for at least a couple weeks.

Feel like roasting a chicken?? One of the best roasted chickens I ever had was when I loosened the skin around the breast and legs, rubbed some butter and spices underneath, and layed sprigs of fresh rosemary and thyme under that skin also, and also a few sprigs in the cavity. Smelled heavenly when it was roasting, and the flavor was intense! :D

I love the Rosemary Potatoes that you make in the microwave. It's a CL recipe. Please let me know if you'd like for me to post it.

Rinsav, I'd love if you posted the potato recipe! We also happen to have a garden full of potatoes that need to be used--this might kill two birds with one stone!

CL's Garlic-Rosemary Roasted Chicken is wonderful and then much quicker but just as tasty is the Rosemary Chciken with Two-Corn Polenta, both are in the Complete CL Cookbook.

Well, if you don't find anything you like on this thread (or the one emily provided), you can certainly send the sprigs off to me!!
I'd do a little dance and use it right up :) Or smell it until I fainted dead away...

I, too, love to oven roast new potatoes with bits of onion and fresh rosemary and thyme.
Also, I oven roast corn on the cob. Wrapped in foil with fresh herbs to give a burst of flavor. We don't use butter or margerine so the flavor from herbs is so important.:p {...licking lips as typing....)
I just ate a terrific dinner. How can I be fantasizing about tomorrow's dinner?... Need to refer to it as "planning ahead":D
