I was given an interesting spice mix that had onion flakes, cinnamon, sea salt, pepper, fennel, thyme and I'm not sure what else in it - do any of you have any wonderful herb/spice mixes to share? Thanks!

I don't have any RECIPES for spice mixes, but I found a neat website where I bought some spice mixtures. It's called Garden of the Gods Seasonings (www.godsseasonings.com). The spice mixtures come in canisters that stack very nicely on top of each other, so you can store them without them toppling over in your cabinets. I ordered a "tower" of three mixes, and I think it was only $15 (not counting shipping). The three I ordered were Rosemary & Garlic, Garden Vegetable, and the Pepper Blend. I really like all three, plus they have quite a few other choices. The canisters are also fairly good-sized, so they'll last a while! I actually was looking for a gift for my brother-in-law who's really into cooking, so I just had to buy some for myself as well. http://www.cookinglight.com/bbs/wink.gif

Many years ago, I found a cookbook that had a lot of good spice is recipes. I'll try to find some of them and post them in the next day or so. I remember that there was a seasoned salt recipe that beat anything on the grocery shelf.
To start off, though, my mother always used a combination of spices to sprinkle on beef roasts or chicken when she was roasting it whole or cut up. It finally dawned on me that I could spoon equal amounts of these spices in a shaker and only have to shake once. That mix is equal parts garlic salt (or powder), onion powder, paprika, salt and black pepper. I sometimes add a shake of cayenne if the spirit moves and I want a little more zip. I even used this on a steak I was going to broil the other night and it was really good.

Here's the recipe called Herb Salt for Meat Dishes.
1/4 c. parsley flakes
1 tbs dried basil leaves
1 tbs dried oregano leaves
1 tbs paprika
1 tsp celery flakes
1 c. salt
With blender at low speed, sprinkle all ingredients except salt into container a little at a time.
Add salt a little at a time and allow to blend until herbs are as fine as the salt.
Pour into a shaker.
Hope you enjoy this as much as I do.

You asked for spice recipes, these are the best. As Emeril would say, it really kicks it up a notch and will make you happy happy happt.I frequently use the Essence and the Southwest blend. I am looking forward to making the Rustic Rub, which I understand is great on vegetables.

Emeril's Essence Creole Seasoning (also referred to as Bayou Blast) Emeril's Southwest Seasoning Rustic Rub
Recipes courtesy of Emeril Lagasse & the Food Network
Emeril's "Essence" Creole Seasoning (also referred to as Bayou Blast:
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly.
Emeril's Southwest Seasoning:
2 tablespoons chili powder
2 teaspoons ground cumin
2 tablespoons paprika
1 teaspoon black pepper
1 tablespoon ground coriander
1 teaspoon cayenne pepper
1 tablespoon garlic powder
1 teaspoon crushed red pepper
1 tablespoon salt
1 tablespoon dried oregano
Combine all ingredients thoroughly. Yield: 1/2 cup
Rustic Rub:
8 tablespoons paprika
3 tablespoons cayenne
5 tablespoons freshly ground black pepper
6 tablespoons garlic powder
3 tablespoons onion powder
6 tablespoons salt
2 1/2 tablespoons dried oregano
2 1/2 tablespoons dried thyme
Combine all ingredients and store in an air-tight container
Yield: 2/3 cup
Prep Time: 7 minutes

Here's another one - a rub for chicken. It's good for pork, too.
1 tsp garlic powder
1/2 tsp sage
1/2 tsp thyme
1/2 tsp cayenne
1/2 tsp salt
2 tsp tarragon
1 tsp marjoram
2 tsp black pepper
1 tbs paprika
I usually let the chicken sit in the fridge for about an hour with the rub on it.
