View Full Version : Here is what I have...what can I make?

Please help me! DH and I are going out of town this Friday night for the long weekend, and will be gone until next Wednesday, so I don't want to go and buy any groceries. I'm having a total brain block and can't figure out what to make for tonight and tomorrow. I'll list what I have: (I roasted a whole chicken before I left for work this morning).

-roasted chicken
-black beans (already cooked, I made Gail's recipe yesterday)
-white rice
-tortilla's
-1 green pepper
-carrots
-celery
-a few scrap's of cheese (mild cheddar, colby, velveeta)

Please help. The only thing I have to use before I leave is the chicken. So if you have ideas using some of the ingredients, that would help! Oh, one more thing, I'm very limited on time. Tonight I have about 30 minutes to cook and eat, and tomorrow I'll have about 1 hour to cook and eat.

How about Chicken, rice, and Black bean burritos?
Just pick up a jar of salsa and you're set! I'd throw the carrots in there too!
Or just layer it up in a casserole, like a "Burrito Pie". Layer tortillas, then beans, chicken, rice (cooked), cheese, etc. Again, salsa between layers, and you are set!

No offense, but I think I hate you. Is your last name 'Stewart' by chance? :)

I make a casserole similar to the one you are probably going to end up, and I always add a can of enchilada sauce (if you happen to have that on hand).

Quesadillas would be good with those ingredients also.

I'd use the tortillas, cheese, chicken and pepper to make chicken quesadillas and then toss the rice and beans together for a nice side.

You could munch on the celery and carrots before dinner!

OR

You could use the chicken, cheese and rice to make a little casserole and heat up the carrots for a side.

Munch on the pepper and celery beforehand.

Oh, for a dessert option, you could spread a little butter on the tortillas, sprinkle with cinnamon and sugar, microwave for about 30 seconds and then roll up and enjoy (taste just like little cinnamon rolls)!
