A simple recipe that was good, but not great. Even though it said to marinate 20 minutes, I probably did it more like an hour or so, and it just didn'y pick up much flavor. I served it with another EF recipe (3/09)-Cumin Rice and Beans, which was also good, but nothing special. But is was easy.

Tequila-Grilled Shrimp

Amount Measure Ingredient -- Preparation Method

1 pound large shrimp, peeled and deveined
1/4 cup white or silver tequila
1/4 cup lime juice (from about 3 limes)
1/4 cup orange juice (from one orange)
coarse salt and ground pepper
1 jalapeno, seeded and minced

In a medium nonreactive bowl, stir together the first 5 ingredients.
Cover with plastic wrap and refrigerate 20 minutes.

Heat a grill or grill pan to medium-high. Clena grill and lightly oil hot
grill. Grill shrimp until opaque throughout, 4 to 6 minutes, flipping
once. Tranfer to a platter and top with jalapeno and lime wedges.

Cumin Rice and Beans

coarse salt
1/2 teaspoon ground cumin
1 cup long-grain white rice
1 (19 ounce) can kindey beas, rinsed and drained

In a medium saucepan, with a tight fitting lid, bring 1 1/2 cups salted
water and cumin to a boil. Add rice, cover and reduce to a simmer. Cook
15 minutes, remove from heat, add beans. Cover and let stand 1 minute.
Fluff rice with a fork.
