I was wondering if any wonderful person out there might be able to help me. I'm searching for a web site or cookbook recommendations for non-egg, non-dairy recipes. The non-dairy isn't too bad, I ususally sub soy milk, but the eggless one is hard. I'm having trouble finding muffins, cakes, cookies, etc. I have recently discovered food allergies and my favorite foods are slowly being taken away http://www.cookinglight.com/bbs/frown.gif Any help is greatly appeciated.
Hi! I just happened to be passing by and saw your plea. While this isn't exactly my forté, you understand, I did a little checking. Maybe what you need is to check under vegan recipes, and see what comes up. For starters, I found two sites (which seem to have the same stuff) and I'm sure some of our vegetarian readers may have other good ideas. I am popping in to tell you the first thing that came to mind was "Tofutti Cuties" non-dairy ice cream sandwiches. They are simply delicious and made from soy.

A couple of other sites where you'll find vegan recipes are, as Gail suggests, vegetarian and/or vegan: Veggies Unite at www.vegweb.com (http://www.vegweb.com) and International Vegetarian Union at www.ivu.org (http://www.ivu.org)
Either of these sites will give you links to more of the same, as will http://vegetarian.about.com , which also has some recipes, but not all dairy- and egg-free. Oh, and there's also an "egg-free" recipe category at http://VegetarianRecipe.com

I have seen several books about dairy free cooking at Borders or any of your bookstores. Yes the vegan websites are a good place to check. Also try www.ivillage.com (http://www.ivillage.com)
they have recipes for special diets. Also try www.soar.berkeley.edu (http://www.soar.berkeley.edu) www.allrecipes.com (http://www.allrecipes.com) has some special diet recipes.

You might also be able to make some of your regular recipes, by substituting other ingredients for the eggs. Some substitutions I've found:
Alternative replacements (quantity per egg substituted for):
2 oz of soft tofu can be blended with some water and substituted for an egg to add consistency. Or try the same quantity of: mashed beans, mashed potatoes, or nut butters.
1/2 mashed banana
1/4 cup applesauce or pureed fruit
One Tbsp flax seeds (found in natural food stores) with 3 Tbsp water can be blended for 2 to 3 minutes, or boiled for 10 minutes or until desired consistency is achieved
1 tsp. soy flour plus 1 Tbsp. water
1 t. of liquid lecithin and 1 T. of soy milk powder and 1/4 cup water
