Last night's dinner was a big hit, for the most part:

Bourbon-Glazed Salmon/Pork Tenderloin: I only had a small pork tenderloin, so I picked up a large salmon fillet and marinated both. Both turned out VERY good. (I was partial to the salmon, DH to the pork). I was worried that it would be too sweet, with all the brown sugar, but it caramelized nicely with the bourbon and made a lightly sweet glaze. I would make this again anytime.

Roasted Asparagus with Balsamic-Browned Butter: YUM! This was so easy, and really good. If I had to choose, though, I'd probably pick the sesame-roasted asparagus from an earlier issue this year as just slightly better.

Orzo with Chicken, Broccoli, and Pesto: Imagine my surprise when I went to throw this all together and realized that I had no broccoli (and it was already 9:30 at night). :eek: It got mixed reviews. Instead of parsley/mint, I used basil leaves, and I left out the chicken since we were having it as a side. Visually, it's a pretty ugly looking dish -- kind of a pukey green color (from the pesto) but with brightly colored green broccoli. It doesn't really make you WANT to eat it. I thought it tasted fine, though. DH didn't like it. If I were to make it again, I'd probably leave the salt out of the pesto. I tasted the pesto plain before mixing it with the orzo and broccoli, and it was VERY salty. It ended up being fine once you mixed it all together, but if I made the pesto again to use on other things, I'd leave the salt out, or at least cut it back by half.

Interesting... Our household had slightly different opinions on these recipes. We all loved the asparagus, and though we liked the previous CL recipes, we liked this one the best. We had the Bourbon-Gazed Salmon recipe last night. I used pork tenderloin instead of the salmon. We thought this was just OK. Didn't over impress us. It seemed very similar to other CL recipes so it's not a repeater here.

Earlier in the week I made theOrzo with Chicken, Broccoli and Pesto. I followed the recipe exactly, using the mint and parsley. I did decrease the salt by half, just because I don't like to add salt when cooking. Everyone really liked it. Aggie94 - I don't blame you for not liking it with it looking so awful!:eek: Mine looked delicious... kind of like a rice, chicken and broccoli salad, not a pukey green color!!! Yuck! The only negative comment I would make on the salad, is that the leftovers the next day were somewhat dry. Maybe next time I will double the pesto part or add alittle more liquid to it.
