Last night's dinner was a big hit, for the most part:
Bourbon-Glazed Salmon/Pork Tenderloin: I only had a small pork tenderloin, so I picked up a large salmon fillet and marinated both. Both turned out VERY good. (I was partial to the salmon, DH to the pork). I was worried that it would be too sweet, with all the brown sugar, but it caramelized nicely with the bourbon and made a lightly sweet glaze. I would make this again anytime.
Roasted Asparagus with Balsamic-Browned Butter: YUM! This was so easy, and really good. If I had to choose, though, I'd probably pick the sesame-roasted asparagus from an earlier issue this year as just slightly better.
Orzo with Chicken, Broccoli, and Pesto: Imagine my surprise when I went to throw this all together and realized that I had no broccoli (and it was already 9:30 at night). :eek: It got mixed reviews. Instead of parsley/mint, I used basil leaves, and I left out the chicken since we were having it as a side. Visually, it's a pretty ugly looking dish -- kind of a pukey green color (from the pesto) but with brightly colored green broccoli. It doesn't really make you WANT to eat it. I thought it tasted fine, though. DH didn't like it. If I were to make it again, I'd probably leave the salt out of the pesto. I tasted the pesto plain before mixing it with the orzo and broccoli, and it was VERY salty. It ended up being fine once you mixed it all together, but if I made the pesto again to use on other things, I'd leave the salt out, or at least cut it back by half.
