View Full Version : Sweet Potatoes?

My husband brought home two sweet potatoes yesterday.....and I have no idea what to do with them?
Should I bake them? Boil them? Saute them? Use them for door props??
First reaction is to bake them for about an hour at 350 and then give them a touch of butter??
Any ideas?

They're lovely baked. You can top with a little butter, salt and pepper, or go the sweet route and top with maple syrup or cinnamon sugar.
I also love sweet potato oven fries. Cut the potatoes into thin strips. Place in a ziplock bag with a few teaspoons of olive oil. Add some seasonings of your choice (I like cumin and paprika, or chipotle and cumin), close the bag, and shake until everything is evenly coated.
Spread in a single layer on a baking sheet and bake at 400 degrees, turning them and shaking the pan a few times, until crisp.

Sweet potatoes are one of my favorite foods!!
If you've never made them, then yes bake them as you would a regular potato and them eat with a dab of butter or pinch of cinnamon. You can also slice them into chips, bake on a cookie sheet for 20 minutes and enjoy. They can also be steamed, mashed, grated and fried, etc...
There are many different ways to enjoy them!!

The last one I bought (for the African Chicken Peanut Soup -- but it was too hot) is now growing in a vase. There was a recipe for roasted sweet pototoes with orange juice and cinnamon, if I'm not mistaken, in CL earllier this year, possibly last fall. DH and I both liked them.

I LOVE sweet potatoes. I stumbled across this recipe, made it, and now this is my new favorite way to eat sweet potatoes. YUM!!

Roasted Sweet Potatoes

INGREDIENTS FOR 4 SERVINGS:
2 pounds peeled sweet potatoes, cut into 1/2-inch-thick slices
Cooking spray
1/4 cup packed brown sugar, divided
1 bacon slice, cut into 1-inch pieces
INSTRUCTIONS:
1. Preheat oven to 400 degrees.
2. Arrange potato slices in a 13 x 9-inch baking dish coated with cooking spray. Sprinkle with 2 tablespoons sugar; arrange bacon on top. Bake at 400 degrees for 30 minutes. Turn potatoes over; bake an additional 30 minutes or until tender.
It's absolutely incredible what one little slice of bacon does for this dish. My whole family RAVED.

There are lots of ideas here. One of the ways I like them are baked like french fries and dipped in bbq sauce. mmmmmm.

I have a recipe for Stir Fried Sweet Potatoes from Nina Simonds' Spoonful of Ginger cookbook that's very nice, if you might like to try it. I had never thought to stir fry sweet potatoes before, but they turned out quite well and we really enjoyed them.

Grace: What do you do with the other two tablespoons of sugar in that recipe? Sprinkle on top at the end? Sounds like something DH would really like.

WooHoo. I have those sweet potatoes in the oven now! But there was no bacon in my frig so I used hot sausage instead......crumbled. Wonder how that will be???

I know you already made your sweet potatoes, but I wanted to share the recipe that made DH and I fall in love with them. I usually make them in a non-stick skillet and use Pam instead of using the vegetable oil, so the amount of fat is much less than what is stated in the recipe.

Sweet Potato Pancakes

1 sweet potato -- shredded
3 scallions -- finely chopped
1 jalapeno pepper -- seeded and minced
1/3 cup flour
1/4 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
2 eggs -- beaten
1/4 cup vegetable oil
Preheat oven to 200F. In a large bowl, combine shredded sweet potato,
scallions, jalapeno pepper, flour, cinnamon, salt and pepper. Add beaten
eggs and mix well. Batter will be coarse and moist.
In a large cast-iron or nonstick skillet, heat 2 tablespoon of oil over
medium heat. Add a scant 1/4 cup batter and press out with a spoon to
form a 3-inch pancake. Cook, in batches, turning once or twice, until
pancakes are brown with crisp edges, about 5 minutes. Drain on paper
towels and keep warm in oven while cooking remaining pancakes. Add
additional oil to pan, as needed to prevent sticking.
NOTE: Pancake batter can be made ahead, covered, and refrigerated several
hours or overnight. Stir to recombine before using.

if desired."

Oops - glad you caught that, Eva! This recipe is actually part of a larger one called Pecan Crusted Pork with Red Onion Marmalade and Roasted Sweet Potatoes (now that sounds like THREE recipes to me....). But anyway, I edited out all but the sweet potato part, but I neglected to fix the 1/4 cup sugar down to 2 Tblsp. The other 2 Tblsp. actually is part of the Red Onion Marmalade. Sorry about that. I originally thought only 2 Tblsp. of sugar for all those potatoes wouldn't be enough, but it's definitely plenty. It's perfect. I love that recipe.
Don't know how it will be with sausage though.....you'll have to let us know, Christine. The bacon imparts a smoky flavor that is just perfect with the sweet potatoes. Kind of like the smokiness of the Chipotle peppers in the Maple-Chipotle Sweet Potato recipe. I like the roasted recipe with bacon better than the chipotle recipe (I've made them both). The chipotle ones are good, but the roasted bacon recipe makes you get up and do a dance!!! :D I think the sausage will be different (not necessarily bad), but it won't be the same as with the bacon. Try it with bacon next time you have some. I keep my bacon frozen in small packages of just a few strips so I don't have to buy a big pack of bacon for just one slice, and then throw the rest away.

Sweet Potato-Apple Bake

Amount Measure Ingredient -- Preparation Method

3 large sweet potatoes
1 Granny Smith apple -- peeled and sliced
2 tablespoons brown sugar
3/4 tablespoon butter
1/2 cup orange juice
1 tablespoon cornstarch
Peel sweet potatoes and cut them into thick slices; boil them until just tender. Cool slightly, and cut them into 1/4" slices. Mix sugar, butter, orange juice, and cornstarch in a small saucepan. Cook over medium heat, stirring constantly, until thickened. In a deep baking dish, place a layer of sweet potatoes, a layer of thinly sliced apples, and some of the sauce. Repeat until ingredients are gone. Bake at 375 F for 45 minutes, or until apples are tender.

My Dad loves sweet potato pie, so I've experimented with a few recipes. Ruth Reichl's recipe is just divine, but I can't at the moment remember which of her books featured the recipe. (Tender at the Bone? Comfort me with Apples? can't remember ... :( ) Dad loves it cold! How's THAT for a recomendation?

...could you share your recipe? I would love to make one for Thanksgiving, but I would need to practice now!! Someone posted a heart healthy recipe for the crust, I would love to make a homemade pie for the holiday!!

I think the book was 'comfort me with apples', it was the only one of the two that I read and I remember that recipe.

Here it is:
Sweet Potato Pie (Ruth Reichl)
2 Medium Sweet Potatoes (1 1/4 pounds, roasted at 350 degrees for 1 1/4 hours, cooled)
1/4 cup Butter, melted
3/4 cup sugar
3/4 cup milk
3 eggs
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 Tablespoon Rum
1 Tablespoon Flour
1 unbaked pie shell
Peel the potatoes, mash the pulp, combine the ingredients in the order given, pour in a crust and bake in a 400 degree oven for 40 minutes.
(I like to stir the potatoes with a whisk, to blend everything together.)
