What's your favorite polenta recipe?

My husband had polenta at work this week and enjoyed it. I'd like to experiment with something at home. Any suggestions?

The polenta with roasted red peppers and fontina in last month's issue (Back to the Best) was fantastic! It was my first time eating or cooking polenta and I really liked it.

I mentioned this on the other "polenta" thread - but we just LOVE the (sweet) Polenta Pudding w/ Blueberry Topping from the microwave issue (a few issues back).

It is so easy, so unusual, and so delicious. I have made it several times (both for us, and for company) - and each time, my guests have raved about it, and begged for the recipe!

I made the morrocan chicken with mushroom polenta located under the recipes section on cookinglight.com. When I was looking for this recipe I found the recipe under the top of African cuisine and we used this as our main entree for our supper club. It was excellent.
