View Full Version : Kofta with Apricot Sauce

Summer must be about over 'cause I feel like cooking again (and I pulled most of my tomato plants out today, quite early for us, but everything has been early this summer here). So last night I made this lamb meatball Kofta with Apricot Sauce (http://www.touregypt.net/mag07012000/mag5.htm) and served it with Persian Rice and a tomato and feta salad with Kalamatas and a lemon & olive oil dressing. My wife was impressed (she wanted leftovers for lunch today). I liked it too, but made some changes for more flavour and to use what I had, namely a red onion (1 cup or so) in place of the leeks, 3 small cloves of garlic, a tsp or more of cumin (doesn`t all kofta have cumin - if not it should!), and a half tsp ground coriander in the meatballs but otherwise pretty much followed the recipe for the meatballs and sauce (though I did use less liquid for the sauce - about 2 cups veggie stock plus some white wine for more flavour). The sauce was quite good and not as sweet as I thought it might be and certainly didn`t overpower the kofta. I expect things to be even better tonght as the meatballs have sat overnight in the sauce.
PS you could make the meatballs with beef, adding more cumin, perhaps, as the beef may be more strongly flavoured than the lamb.
