Hi, I'm looking for low-fat crockpot recipes. Does anyone have any to share or can you direct me to an appropriate site? Thanks so much!

Most any meat or chicken recipe can be made low fat, particularly soups or stews, if you just trim off all the fat from the meat before you use it. If you have to brown in first, I sometimes just spray the crockpot with cooking spray, brown the meat and then add the rest of the ingredients. Have been doing this for years and it seem to work.

I would also be interested in low fat crock pot recipes (with a hitch). I would like foods that are good for munching on during football games, ie. stews or appetizers or main dishes that can be put on top of rice. A lot of recipes I have read are done with a whole chicken. That wouldn't work for me. Any help would be greatly appreciated. Lchiles

I have one for a black bean & veggie soup that my husband and I love. Unfortunately it's at home right now, and I'm at work. I'll try to remember to bring it in tomorrow to post it!

Lchiles, I know this doesn't help you much since it's a whole chicken, but I really liked this one. We have a rectangular crockpot. My husband and I really enjoyed this chicken and the sauce (gravy?) was very good and light, too! I thickened it up a little bit with some flour and added a little bit of onion and seasoned salt to it. I am not sure who originally posted this one. The garlic made the house smell wonderful, but it was not overpowering in the chicken itself. I have lots of fresh rosemary growing in my garden, too, which makes it all smell even better! So here it is again:
Slow-Roasted Rosemary-and-Garlic Chicken
10 garlic cloves, minced
2 tablespoons chopped fresh rosemary
1 (5- to 6-pound) roasting chicken
5 garlic cloves
4 (3-inch) rosemary sprigs
1/4 cup orange juice
1 tablespoon balsamic vinegar
1. Combine minced garlic and chopped rosemary. Remove and discard giblets and neck from chicken. Rinse chicken with cold water; pat dry. Trim excess fat. Starting at neck cavity, loosen skin from breast and drumsticks by inserting fingers, gently pushing between skin and meat. Rub garlic mixture under loosened skin over breast and drumsticks. Place 5 garlic cloves and rosemary sprigs into the body cavity. Place chicken, breast side down, in an electric slow cooker. Cover with lid; cook on high heat for 1 hour. Reduce heat setting to low; cook 7 hours. Remove chicken from slow cooker, reserving drippings. Discard skin from chicken.
2. Place a zip-top plastic bag inside a 2-cup glass measure. Pour drippings into bag; let stand 10 minutes (fat will rise
to the top). Seal bag; carefully snip off 1 bottom corner of bag. Drain drippings into a small saucepan, stopping before fat layer reaches opening; discard fat. Add orange juice and vinegar to saucepan; bring to a boil. Reduce heat; simmer 10 minutes. Yield: 6 servings (serving size: 3 ounces chicken and 1/3 cup sauce).
