I find that once I've opened cheese, it goes really moldy within a couple weeks, despite the fact that I've wrapped it really well and put it in a ziploc or tupperware container. How can I avoid this? Is it possible to freeze cheese (and what does it taste like once you have frozen it?)

I freeze cheese all the time and haven't noticed a difference in the taste or texture. I haven't frozen soft cheeses (like brie or goat cheese), so I can't say whether the texture would be the same or not.

I usually wrap my cheese in plastic wrap and then in a ziploc (making sure a get rid of as much air as possible). Then I try to make sure and use it within a couple of weeks.

I freeze cheddar all the time and the flavor stays the same, but I think the texture is different. I find it to be crumbly so it doesn't work well for grating, but if you're melting it it works just fine.

Julie, there are a few messages about this (one from me, too) if you do a suject heading only search under Cheese. I think it's called 'Cheese Storage (or cheese 102)'.
