View Full Version : Grilled Chicken with Plum Salsa

I know there are threads that reviewed this recipe but I wanted to start one with a thumbs up! :) I made this tonight and loved it. I served it with brown rice and salad. For dessert, I served Cinnamon-Kahlua (sp?) Brownies, one of my familie's favorites! Anyway, I will definitely make this again. Everyone loved it. The kids ate the chicken without the salsa but all the adults liked the salsa too! :)

LynnSC, I made it the same night and my DH and I both loved it too! I didn't like what I served with it though, but I think rice and salad are good choices that I will do next time.

The recipe said you could substitute pineapple or peaches for the plums in the salsa, but I thought the plums were perfect--just the right amount of sweetness with a little crunch.

Hi! This is on the menu for dinner tomorrow night, but I have some free time tonight! I'm wondering: What, if anything, could be made the night before? Could I do the salsa tonight - and not have it soggy tomorrow?

I prepared the salsa and coated the chicken breasts the morning of my dinner and everything was great. I don't see any reason why you couldn't prep it all the night before if you wanted. I'd think the plums and onions in the salsa would stay nice and crunchy.

I will post it later tonight or tomorrow (Wed) morning. I am on the way out now. I have CL 6.0 but don't have cookpacs so I will just type it in and export it. I need it in my CL anyway. I promise I will post it for you. They are delicious!!!!!!

Ok, so I cheated.:D I found the recipe with a quick search of the BB and copied it. Here it is!

Kahlua-Cinnamon Brownies
1/4 cup semisweet chocolate chips
1/4 cup butter
1/4 cup Kahlua
2 teaspoons vanilla extract
3/4 cup all-purpose flour
3/4 teaspoon baking powder
1/4 cup unsweetened cocoa
1 teaspoon cinnamon -- ground
1/4 teaspoon salt
1/2 cup plus 2 tablespoons brown sugar -- packed
1 large egg
Cooking spray
1 teaspoon granulated sugar

Preheat oven to 350.

Combine chocolate chips and butter in a small saucepan; place over medium-low heat, and cook until chocolate melts. Remove from heat; stir in Kahlua and vanilla.

Combine flour and next four ingredients in a medium bowl.

Beat brown sugar and egg in a large bowl at low speed of a mixer until blended. Add chocolate mixture; mix well. Add flour mixture, beating until smooth. Pour batter into an 8 inch square pan coated with cooking spray. Bake at 350 for 25 minutes or until a wooden pick inserted in center comes out clean. Remove from oven; sprinkle with sugar. Cool in pan on wire rack.

Per serving: 108 Calories (kcal); 4.1g Total Fat; (34% calories from fat); 1.5g Protein; 16.5g Carbohydrate; 13mg Cholesterol; 93mg Sodium

It was pretty good! I really enjoyed the plum salsa -- made it the night before and the texture was perfect and the flavors had time to come together. I'd always make the salsa the night before.

The chicken ... the cumin definitely stood out. Now, I love cumin; DBF ate the chicken saying that it had an interesting flavor. (Even though he's from TX, cumin's not in his regular palate!)

I'd make it again because it was fast and easy.

I also really liked the chicken with plum salsa. I make a lot of salsas, but had never done one with plums.

I also really enjoyed this recipe. It was a good weeknight meal... I prepared the salsa ahead and got from the refrigerator to the table in about a half hour... but it didn't taste "thrown together". I thought the sugar glaze on the chicken balanced nicely with the tartness of the plums. Cut up the leftover chicken and tossed it with the salsa and baby spinach for lunch the next day. Mmm.

I have to add to this thread. I did not make this chicken, but my new housemate did. He's a reluctant cook, but interested in good food and being healthy. He's been poring over my CL cookbooks, and making careful grocery lists each week. I've enjoyed watching him try these recipes (from a distance, though, as he's a self-conscious cook).

He made the chicken and plum salsa recipe last week and really liked it. He was excited by how quickly it all came together. I believe he ate half the recipe in one sitting, and the other half for lunch the next day (so much for "light") and I noticed he bought the ingredients to make it again this week. So another thumbs up!

(And thank you for the brownie recipe Lynn, I don't think I've tried that one!)

Yum! I happened to read your post this morning just before I packed my lunch for work. The plum salsa on greens was delicious (no additional dressing needed!), and I heated the chicken before tossing it in too ... Great Lunch!

I made the recipe for my best friend a couple of weeks ago. She is a really inexperienced eater (when we met as freshmen in college 8 years ago she had never had PBJ sandwich, oranges-or anything orange, cheesesteaks, the list goes on.) Anyway, she's gotten much better at trying new things and she really liked the chicken with plum salsa (First time she'd ever had plums!) I served it with mashed sweet potatoes (which she tried but didn't like-I loved them though) The sweetness of the potatoes complimented the sweetness of the plums!
