View Full Version : Salsa & Beverage Recipes Needed!

I'm having people over Friday night, and I've decided to do the grilled Fajitas from a recent issue. I pretty much have the menu figured out, except that I'd like to serve some special beverage that goes with the Tex-Mex theme. We don't drink, so I'm looking for something non-alcoholic, maybe citrus-y, that can be made ahead and just kept in the fridge. I have lots of cookbooks with recipes, but I'm hoping someone will have a recipe they KNOW is good, refreshing, and healthy!
I also was thinking I'd like to try making my own salsa, since I have lots of fresh tomatoes. I've never made salsa before, so again, I'm looking for tried & true recipes.

Becky Look under 8/3 postings "can you help me with a Mexican Menu"? There Ann posted a fresh tomato salsa recipe. Beer & margaritas are great with Mexican food. You could get non alcoholic beer,have reg and margaritas for the guests or just make a "mock" sangria
from Cooking Light
1 (3/4 bunch seedless grren grapes separated into small clusters)
2 limes each cut into 8 wedges
1 med orange cut into 8 wedges
5 cups unsweetened white grape juice chilled
1/2 c lime juice chilled
1 (33.8 ounce) bottle club soda chilled
1 (32 ounce) bottle apple cherry juice chilled
Arrange first 3 ing in single layer in shallow pan. Cover and freeze 3 hrs
Combine white grape juice & remaining 3 ing in large punch bowl; stir well. Add frozen fruit. Serve inmediately
You can also make piņa coladas just omit rum
Buy Coco Lopez (cream of coconut) instructions are in the back. You will only need pineapple juice, cream of Coconut and ice (for Virgin piņa coladas)
You could also have a fruit punch or virgin daiquiris. Or buy Bacardi mixers in the frozen section (where juices are) they have several drink mixes just omit the rum.
Here is a different salsa
Pineapple Spicy
1 8 ounce can crushed pineapple drained
1/4 c chopped cilantro
1 garlic clove minced
2 green onions chopped
1 jalapeno minced
2 tab fresh lime juice
1/2 tsp salt
Serve with fish or chicken
or this one looks pretty with pieces of red pepper
1 15 ounce can pineapple tidbits drained
1/2 c chopped red bell pepper
1 tsp grated fresh ginger
1 tab fresh lime juice
pinch of ground cloves
1/4 c chopped fresh cilantro
1/4 tsp hot sauce
Combine cover and chill 15 minutes Makes 1 1/2 cups

Becky, I've had pretty good luck with this salsa recipe. Unfortunately, I'm not a measurer, so I just kind of throw it together. Here's an ingredient list for you though.
Salsa:
Roma tomatoes
jalapenos
slice of green bell peper
cilantro
red onion
3/4 can black beans
lime juice
seasoned salt
smidgon of garlic (minced)
In general.... 5-8 tomatoes (depending on size)
a handful of cilantro (we use a lot as we really like it)
a smallish/medium red onion
1-2 jalapenos depending on hottness or your taste
1/4 bell pepper
about a tsp of lime juice.
1/2 tsp seasoned salt (I use regular salt, my husband likes seasoned)
and I mean a real tiny smidgon (is that a word?) of garlic, it gets really overpowering if you use too much.
I actually just either chop this up by hand or process it in the food processor. I like it chunky, so I try not to over process.
Sorry that's not so easy to follow, mine comes out different every time. The tomoatos ripeness, etc will affect the taste, texture and such. Sometimes I add a regular tomato for more juice.

A friend at work gave me this salsa recipe. It's really easy and we love it.
One 10 1/2 oz can of Rotel (drained)
One 14 1/2 oz can Mexican stewed tomatoes
One bunch of cilantro
One bunch of green onions
Put all in food processor and whirl about 10-15 seconds. Refrigerate to let flavors develop.
