I was a little surprised to not see any Easter menu threads yet. Looking ahead at the forecast, DH & I plan on bicycling all day and then coming home for Easter dinner for two. Has anyone done a ham in the crockpot? I'm wanting to keep it very low key & was thinking that I could do some cheesey potatoes in a crockpot, ham in another (if that doesn't dry it out), have some type of salad made ahead, and then all I have to do is steam some asparagus & wa la, dinner is done. I'm also looking for a dessert for two, preferrably lemon or lime...something refreshing. Anyone have any ideas to share?

I had just read something - somewhere - about ham in a crockpot . . . at my age you tend to [I]forget[I]! Soooo, I went to Google and there are tons of sites offering recipes. You probably did, too. Wish I had some experience with this to be helpful. PS: I was considering something similar for Easter and family. Linda ~

When it was just DH and I, we would often just have a ham steak. I'd make a potato casserole and put it in the oven for timed bake and then when we got home from golfing we'd just heat up the ham steak and make asparagus.
We'd almost always golf for the first time of the season on Good Friday with a bunch of work friends. That's when we lived in Wisconsin. Sometimes there would still be piles of snow on the ground.

Thanks for the ham steak idea. I really wasn't wanting to fill up the freezer with leftover ham so the ham steak will work out perfectly.

We used to do this at the cabin, where DH cooked on an outside wood fire pit. One day, he did pineapple rings on the griddle out there, and it was so hot, the pineapple "danced!" I think we may try that this Sunday! Thanks for bringing back that memory.:D

Or you could make a nice, long-cooking tomato "gravy," i.e., a meat-filled tomato sauce with lots of Italian sausage, chuck or flank chunks, and maybe a big bracciola (rolled 'n' stuffed slice of beef) that you can slice, less work than making lots of little ones. When you get home, just throw some pasta in boiling water and you have a feast -- plus leftovers for later in the week. The meat makes great hero sandwiches.

For desserts, I just found a blog called Desserts for Two (http://www.dessertfortwo.com/). There are a bunch of lemon desserts on the blog.

Kay, what a great memory to savor! Phoebe, you must have read DH's mind. We stopped at the store on the way home from work tonight & he asked if I would be willing to consider Sunday gravy. He's Italian and we use to make that a Sunday tradition which has unfortunately become a rarity. I'm normally very traditional so I kind of gasped when he mentioned it, but its starting to settle in as a good idea. :p Patti, I will definitely be mulling over the site and settle on a lemon dessert regardless if we go with ham steak or gravy.
