I'm hosting a baby shower Wednesday evening. It's a potluck deal -- all I'm on the hook for is drinks. So, in addition to soft drinks, tea and wine/beer, I'd like to be able to offer some sort of a non-alcoholic "cocktail" for those who want to be festive without imbibing. My 10 minute Internet search has proved disappointing. I don't want to make gallons of punch; I'm looking for something like a virgin Margarita. Any tried-and-true mocktails out there?

I have recipes for Mock Champagne, Mock Sangria, Mock Margaritas, Mock Mojitos, Mock Peach Lady, Mock Pina Coladas and Mock Salty Dog. But none of them T & T:( If you would like any of the recipes, please just let me know.

Well, they all sound better than what I've found so far, although my Canyon Ranch cookbook <kind of> came thru for me -- sparkling water, a couple hits of Angostura bitters and a bit of fresh-squeezed lime juice. Appeals to me, not sure if it would appeal to anyone else.

If you don't mind, I'd like to investigate the mock champagne and mock margarita recipes. Thanks!

Here is the one for

Mock Margaritas

In a blender container combine 1 (6 oz) can frozen limeade, 3/4 cup orange juice and 2/3 cup unsweetened grapefruit juice. Cover, blend until smooth. With blender running, add 25to 30 ice cubes, one at a time through hole in lid, blending until slushy. Rub rims of 8 glasses with a lime slice. If desired, invert into a dish of coarse sugar or salt; shake off excess. Pour margaritas into prepared glasses. If desired, garnish with lime slices. Makes 8 (4 oz) servings.

and of the 3 mock champagne recipes, this one sounds the best.

Mock Pink Champagne

1/2 cup sugar
1 cup water
1 cup grapefruit juice
1/2 cup orange juice
1/4 cup grenadine syrup
28 oz. ginger ale, chilled
Twists of lemon peel
Maraschino cherries, stems on

Combine sugar and water in nonreactive saucepan; simmer uncovered, stirring constantly until sugar is dissolved, about 3 minutes. Cool.

Combine sugar mixture with fruit juices and syrup in nonreactive bowl. Chill. Just before serving add chilled ginger ale, pouring it slowly down sides of bowl. Serve over ice. Garnish with lemon peel or a cherry.

Thanks for the recipes. I think the mock champagne will be what I try. Looks like I could mix it all up except for the ginger ale the night before and serve it in individual glasses, not a punch bowl.
