Hi, all! So what is on your plate this week?:D

I'm planning:
Sausage & chicken gumbo - CL Nov 02
Barley risotto with julienned chicken &parmesan - CL J/F 96
Fried mozzarella steaks with crispy salami - RR Oct 08

And for cgotw - Date & Walnut wontons

I made the mozzarella steaks tonight and I have to say the salad part included with the recipe using the crispy salami was the best part. You add balsamic vinegar to a salad that has the oil from the salami and portobello mushrooms that are also fried to release the water. So good and a definite keeper.

The risotto and the wontons are up for tomorrow. Can't wait to see other menus :D

After a week and a half of being sick I have to wander out to the grocery store to stock up on everything.

Red Beans and Rice
Lemon Dijon Panko crusted Chicken (CGOTW)
Aloha Chili
Honey Lime Enchiladas (CGOTW)
Mexican Pulled Pork
Herb Garlic Bread (CGOTW) Made last night
Yogurt Marinated Chicken (CGOTW) Made last night

Didn't even dawn on me until I typed it out that this is heavy on the Mexican side. Good thing Cinco de Mayo is coming up. Think I need to find a good margarita recipe and I'm all set.

Margaritas sound good (even at 7:30 a.m. - it was a long weekend...).

It was a good weekend for cooking:
- Chipotle Salmon Chowder
- Indonesian Ginger Chicken and Herbed Basmati Rice (Barefoot Contessa)
- Chicken stock, finally
- Cinnamon Puff muffins (King Arthur Flour, and this may be the last muffin recipe I ever make - they are that good. I had to give a half dozen to the neighbors, or I would have eaten the entire batch.)
- Focaccia

I've been craving veggies, so for the rest of the week:

- Monday - Pasta with assorted veggies
- Tuesday - Cauliflower and carrot curry
- Wednesday - Tacos
- Thursday - Vegetable Lo Mein with Edamame

Friday still TBD.

Here is mine

Monday - Pasta with slow cooked meat sauce, salad

Tuesday - Pulled pork sandwiches, oven fries

Wed - chicken and veggie skewers, rice, fruit salsa

Thurs - stuffed chicken, baby potatoes, corn

Kinda boring but I didn't have much inspiration this week. The meat sauce will make a ton so I freeze the leftovers and then I have sauce for lasagna or manicotti

Okay, I definitely need to get on the ball with all of the Mexican food and the pulled pork. You all are making me hungry!:D

Tonight is Bon Appetit's recipe for Cola Glazed Ribs, my coleslaw recipe and Bush's Grillin Beans Southern Pit ( I LOVE them:rolleyes:).

Tuesday: Pasta Carbonara Florentine CL 2007

Wednesday: Philly Steak Sandwiches (DH makes them)

Thursday: Grilled Marinated Pork Chops

Friday: Dinner out!

My cooking started on the weekend this time (or Friday night, to be more specific).

So far I've made the following (served with salads, etc. as appropriate):

- spaghetti pie (adapted from CL recipe)
- potato skins (adapted from CL recipe)
- chicken in tomatillo sauce (made up)
- broccoli chowder (Eating Well)
- cinnamon coffee brownies (Williams Sonoma Cookies and Brownies)

I need to marinate some more chicken tonight. Maybe I'll do a chicken korma, or else butter chicken.

How did the wontons turn out? I wasn't sure which thread those would be in. Sounds intriguing.

Thanks for asking, Veshke! They were complex flavored sugar bombs, best served warm! I rated them an 8+. I posted the review and the recipe on cgotw #1 post 68. Thanks also for posting the cinnamon puff muffin recipe, they look Awesome!
