I know I have a recipe for the Peanut Butter Munchies...but was wondering if there is something similar with a mint center...anyone have a recipe like this? I am going to visit my in-laws and my b-i-l loves chocolate and mint, favorite candy is junior mints...any assistance will be greatly appreciated!

Peanut Butter Munchies (From BH&G Christmas Cookie Special Issue 2006)

1 1/2 C AP flour
1/2 C unsweetened cocoa powder
1/2 tsp baking soda
1/2 C butter, softened
1/2 C granulated sugar
1/2 C brown sugar
1/4 C peanut butter - I used natural creamy and would recommend this
1 egg
1 T milk
1 tsp vanilla
3/4 C powdered sugar
1/2 C peanut butter (natural creamy)
2 T granulated sugar

1. Preheat oven to 350. In a medium bowl stir together flour, cocoa powder and baking soda, set aside.

2. In a large bowl, beat together butter, 1/2 c granulated sugar, brown sugar and the 1/4 c peanut butter. Add egg, milk and vanilla, beat well. Beat in as much of the flour mixture as you can. Stir in the the rest. Form the chocolate dough into 32 balls 1 1/4 inches in diameter. Set aside.

3. For filling, combine powdered sugar and 1/2 c peanut butter until smooth. Shape mixture into 32 3/4 inch balls.

4. Slightly flatten a chocolate ball, top with a peanut butter ball. Shape the chocolate dough around the peanut butter filling, completely covering the filling. Roll this in a ball.

5. Place balls 2 inches apart on an ungreased cookie sheet. Lightly flatten with the bottom of a glass dipped in the 2 T of granulated sugar.

6. Bake cookies in preheated oven for 8 minutes or until just set and just slightly crack. Let stand 1 minute and transfer to wire racks.

There was a recipe on the BB a few years back (I think) that wrapped a chocolate dough around a Rolo - making a caramel center. You could probably do the same thing with a junior mint. I'll see if I can find the recipe.........

Here's what I was thinking about. Post and notes were Greysangel.........

I have filled with rolos, reese's cups, snickers, butterfinger chunks and junior mints.

Caramel Filled Chocolate Cookies

1 cup butter -- softened
1 cup granulated sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
3/4 cup unsweetened cocoa powder
1 cup chopped walnuts
1 tablespoon granulated sugar
48 ROLO candies


Beat butter or margarine until creamy. Gradually beat in white sugar and brown sugar. Beat in eggs and vanilla. Combine flour, baking soda and cocoa. Gradually add to butter mixture, beating well. Stir in 1/2 cup walnuts. Cover and chill at least 2 hours.

Preheat oven to 375 degrees F (190 degrees C).

Combine remaining 1/2 cup nuts with the 1 tablespoon sugar. Divide the dough into 4 parts. Work with one part at a time, leaving the remainder in the refrigerator until needed. Divide each part into 12 pieces. Quickly press each piece of dough around a chocolate covered caramel. Roll into a ball. Dip the tops into the sugar mixture. Place sugar side up, 2 inches apart on greased baking sheets.

Bake for 8 minutes in the preheated oven. Let cool for 3 to 4 minutes on the baking sheets before removing to wire racks to cool completely.

These are to die for. I never make them unless I'm taking them somewhere the next day because I can't stay out of them. I have seen a version around somewhere with chocolate dough, so if you google a little you might turn it up.

Hidden Chocolate Cookies

1/2 cup sugar
1/4 cup brown sugar
1/2 cup butter
1/2 tsp vanilla
1 egg
1 2/3 cup flour
1/2 tsp baking soda
1 pkg Andes mints

Cream sugars and butter. Beat in egg and vanilla, then flour and baking soda. Shape about 1 Tbs dough around each mint into a sort of oval shape (make sure mint is covered completely). Place on ungreased cookie sheets and bake at 400 degrees for 9 minutes. Cool and frost.

Frosting

1 cup confectioners' sugar
1/4 tsp vanilla
1+ Tbs milk

Combine and mix well, adding enough milk for spreading consistency.

I know I've seen brownie recipes with peppermint patties layered in the middle. Is that of interest?

The brownies and the cake sound really good too if you could post the recipes that would be great!

I did make cookies last night and used the recipe that "Goin Coastal" posted. I used a dark chocolate mint that my daughter picked up at Trader Joes...similar in shape to a Rollo candy. I ate 2 this morning to check them out...I just couldn't handle it last night to sample...I am glad I am at work and they are at home because I really liked the flavor and texture...

Thanks for everyone's help! I am sure my B-I-L will love them and if not I guess I stand to gain a couple of pounds this weekend!!!;)
