I would like to make a coffee or crumb cake this weekend for my in-laws. Any tried-n-true recipes out there?

I think the blueberry-pecan cake (from the one-bowl cake section in August?) would go great with coffee. I made a couple last week, one for home and one for the office, and they both disappeared quickly.

There was a great Cranberry - (some kind of)nut buttermilk coffee cake awhile back... Stunning! I think it was hazelnut, I used pecan and it was amazing...

I made a great cranberry coffee cake from the Dec issue of CL. I'm not sure its the one Tigboo mentioned. But I would give it a definite thumbs up!!!!

NOT EXACTLY LIGHT!!!

This is a recipe of my childhood..."Norma" was one of my Mom's best friends...and this coffeecake is to die for....

NORMA KULLMANN'S SOUR CREAM COFFEE CAKE

CAKE: 1 cup sour cream
2 cups white sugar
1 tsp. vanilla
1/4 tsp. salt
1 cup margarine
2 eggs
1 tsp. baking powder
2 cups sifted flour

TOPPING: ½ cup chopped nuts
2 Tbsp brown sugar
½ tsp cinnamon

Cream margarine and sugar. Add eggs, sour cream, vanilla and salt. Add rest of the dry ingredients. Place ½ the batter in 10" tube pan. Sprinkle with ½ the topping. Add remainder of batter and finish with rest of topping.

Bake 350 degree oven for 55 - 60 minutes
Cool before removing from pan and sprinkle with powdered sugar.

Apple-Cinnamon Coffee Cake

1/2 cup butter -- softened
1 cup sugar
2 eggs
2 teaspoons vanilla
2 2/3 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup buttermilk
2 cups Granny Smith apple -- peeled and chopped
1 1/4 cups brown sugar
1/2 cup walnuts -- chopped
1/3 cup all-purpose flour
2 tablespoons cinnamon
1/3 cup butter -- melted

Grease and flour a 9 x 13" baking pan; preheat oven to 350 F. In a large mixing bowl, beat together the 1/2 cup butter and 1 cup sugar with an electric mixer until well combined. Beat in the eggs and vanilla. Combine 2 2/3 cups flour, baking powder, soda and salt; add alternately to beaten mixture with buttermilk, beating until combined. Fold in apples. In a medium bowl, combine brown sugar, nuts, 1/3 cup flour and cinnamon. Mix in 1/3 cup melted butter. Place 1/2 of cake batter in the prepared pan, spreading evenly. Sprinkle with 1/2 of the crumb mixture. Repeat, ending with crumb mixture. Bake for 60 to 70 minutes.

I second the Huckleberry Coffee Cake (made with blueberries or raspberries). I've made it several times and it is soooo goood! Everyone loves it.

there is also a bluberry/almond coffee cake in the June 2000 issue that is awesome! I have made this about 10 times, and everyone raves...it's also real low in calories!

In the recipe finder type crumb cake . DH's favorite is the banana coconut and the rosemary lemon crumb cake but they are all easy and tasty

Ditto on the recommendation for the June 2000 Blueberry Almond Coffee Cake. It is to die for! It is one of our family favorites.

The Cinnamon-Apple Coffee Cake from 1997 is very good too. Have you thought about Pound cakes? CL has some awesome pound cake recipes. :D

The only change that I recommend to this recipe is that you double it!

BLUEBERRY ALMOND COFFEECAKE

1 c all-purpose flour
1/2 c sugar
3/4 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1 cup fresh blueberries, divided
2/3 cup low-fat buttermilk
2 tbsp butter or margarine, melted
1 tsp vanilla
1/4 tsp almon extract
1 large egg
Cooking spray
1/4 cup sliced almonds
1 tbsp brown sugar
1/4 tsp ground cinnamon

1. Preheat oven to 350 degrees.
2. Lightly spoon flour into a dry measuring cup, level with a knife. Combine first 5 ingredients in a large bowl; add 2/3 cup blueberries and toss well. Combine buittermilk, butter, extracts, and egg; stir well with a whisk. Add to flour mixture, stirring just until flour mixture is moist.

3. Spoon batter into an 8-inch square baking pan coated with cooking spray, spreading evenly. Top with 1/3 cup blueberries.

4. Combine almonds, brown sugar and cinnamon, and sprinkle over blueberries. Bake at 350 for 35 minutes or until a wooden pick inserted in the center comes out clean.

Yield: 8 servings (serving size 1 [2 inch] square).

has some great coffeecake recipes (this is the fleischmann's site). I made a peach kuchen a couple of weeks back, and it was great. The recipe called for canned peaches, but I used fresh and it was excellent.


Here is the recipe:

Peach Kuchen

Makes 1 coffeecake

2 1/2 cups all-purpose flour
1/3 cup sugar
1 envelope FLEISCHMANN'S RapidRise Yeast
1/2 teaspoon salt
1/4 cup milk
1/4 cup water
1/2 cup butter or margarine
2 eggs, large
2 (15-ounce) cans sliced peaches in heavy syrup, drained
Cinnamon-Nut Topping (recipe follows)


In large bowl, combine 1 cup flour, sugar, undissolved yeast, and salt. Heat milk, water, and butter until very warm (120 to 130oF). Gradually add to dry ingredients. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add eggs and 1/2 cup flour; beat 2 minutes at high speed, scraping bowl occasionally. Stir in remaining flour to make a stiff batter. Turn into greased 13 x 9 x 2-inch baking pan. Arrange peaches in rows on top of batter. Sprinkle Cinnamon-Nut Topping evenly over peaches. Cover; let rise in warm, draft-free place until doubled in size, about 1 hour.

Bake at 375oF for 25 to 30 minutes or until done. Serve warm or cool. Cut into squares to serve.

Cinnamon-Nut Topping:

In medium bowl, cut 1/4 cup butter into 1/2 cup firmly packed brown sugar until crumbly. Add 1/3 cup sugar, 1/4 cup flour, 1/2 teaspoon ground cinnamon, and 1/3 cup chopped pecans. Stir until well blended.

I made the one bowl expresso coffee cake yesterday (Aug issue) and the black and white cake before and they are good and easy. I see my previous post had an icon of a down thumb my apologies I don't know how that appeared on my posting
