Can you tell I do my menu planning on Sundays :).

Tonite will be miso soup, rice, and various assortments of spring rolls (have never tried these before so I'm excited!).

MON: Veggie Chili (likely using butternut squash and lots of diff beans)
TUE: Veggie Ravioli over Spinach
WED: Veggie Fajitas
THURS: Potato/Lentil burgers
FRI: Veggie Pizza

I'll play, a bit late!

Mon: whole wheat gnocchi w/ pesto, corn, beans, kale
Tues: tofu dengaku (from Veg Times - basically it's baked tofu w/ miso paste), brown rice, steamed snow peas
Wed: braised turnips, carrots, & red onions
Thurs: almond soba noodles w/ broccoli and/or arugula thrown in
Fri: might be out? or leftovers? or cook up some more of what shows up in CSA tomorrow

Thanks, Tina! We love gnocchi and often have it w/ marinara and some sort of veggies thrown in -- usually spinach and asparagus. I've never heard of almond soba noodles, will have to keep my eye out :).

Tina, I love those noodles but would caution you to taste as you go with the curry paste. I thought the end product was great when I made them, but my husband found them too spicy (and I thought there was no such thing for him!). Now I just have them when I'm alone :D
