Okay, I sorta tricked you into looking at this one. My in-laws are in for the weekend and right before they arrived, a friend called and needed as many green onion recipes as I could give her.

She grew a ton of green onions and now needs to make some freezable recipes. I have exactly 10 minutes to spare for this project due to my company but thought maybe someone could lead the way for me. I was thinking soups and casseroles. Any help is very much
appreciated.

Shoyski- the first recipe that comes to mind is the spaghetti pie. I have made it and we really like it. The second recipe I haven't tried, but it sure sounds good to me!

Spaghetti Pie

1 pound ground round
1/4 teaspoon salt
1/4 teaspoon black pepper
2 8 oz cans tomato sauce with garlic
1 1/2 cups low fat sour cream
1/2 cup chopped green onions
1/4 cup (2 oz) 1/3 less fat cream cheese, softened
4 cups hot cooked spaghetti (about 8 oz uncooked)
Cooking spray
1 1/3 cups (about 5 oz) shredded reduced fat extra
sharp cheddar cheese

Preheat oven to 350 degrees
Cook meat in a large nonstick skillet over medium heat until browned,
stirring to crumble. Drain well, and return meat to pan. Stir in salt,
pepper, and tomato sauce. Bring to a boil, reduce heat and simmer for 20
minutes. Combine the sour cream, green onions, and cream cheese in a
small bowl, and set aside. Place spaghetti noodles in a 2-quart casserole
dish coated with cooking spray. Spread the sour cream mixture over
spaghetti noodles. Top with meat mixture. Sprinkle with cheddar cheese.
Cover and bake at 350 for 25 minutes. Uncover, bake an additional 5
minutes or unti cheese in bubbly.

Green Onion Drop Biscuits

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
3 tablespoons vegetable shortening
1/4 cup finely chopped green onions
1 cup low-fat buttermilk
Cooking spray

Preheat oven to 400º.
Combine first 4 ingredients in a large bowl; cut in shortening with a
pastry blender or 2 knives until mixture resembles coarse meal. Stir in
green onions. Add buttermilk, stirring just until flour mixture is moist.
Drop batter by heaping tablespoons onto a baking sheet coated with cooking
spray. Bake at 400º for 15 minutes or until lightly browned.

Serving Size: 1 biscuit

Green onions are lovely in a frittata. Cut them into sections and saute them in a bit of olive oil until they've softened. Then you can add any other vegetables you like, but bell pepper strips and diced cooked potatoes are especially good, as are chunks of zucchini. (When I use these additional vegetables, I also add some minced garlic, but when I use the green onions alone, I leave out the garlic.) When all the vegetables are softened, beat up some eggs with salt and pepper and pour them over the vegetables. Cook over low heat until most of the eggs are set (they may be a bit runny in the middle) and then either pop the frittata under the broiler to finish cooking or flip it over in the pan. Myself, I'm a terrible flipper, so if I've started the frittata in a pan that doesn't have an ovenproof handle, I slide the frittata out into a pie pan for the trip to the broiler.

Green onions also make a good vegetable in highly-spiced Chinese stir-fry dishes. I have one for lamb that's particularly good, if you're interested.

My husband likes green onions in the peanutty noodles. Also, why not just chop or slice a bunch and freeze them for later use?

Okay, here I am back with the lamb recipe:

Flash-Fried Lamb with Green Onion

Serving Size : 4

3/4 lb leg of lamb -- sliced thin
1 Tbsp peanut oil
MARINADE
1 Tbsp oil
2 Tbsps rice wine
2 Tbsps soy sauce
1/2 tsp salt
1/2 tsp Szechuan pepper -- ground
--------
3 whole green onions -- cut in 3" pieces
3 clove garlic -- sliced thin
SEASONINGS
2 Tbsps soy sauce
1 Tbsp vinegar
2 Tbsps sesame oil

Mix the marinade with the lamb and marinate at least 15 minutes. Meanwhile, heat the peanut oil in a wok until very hot. Add the garlic slices and stir-fry for a few seconds. Pour the excess marinade off the lamb and then add the lamb slices to the oil. The lamb slices are cooked as soon as they turn white, which should be almost immediately (cook the slices in several batches if necessary).
When all the lamb is white in color, add the green onion. Add the seasonings, give all the ingredients a good stir, and remove to a serving dish.

Excellent,guys! I shall pass this stuff along. I ended up going to the recipe finder using green onion and it came up with over 100 recipes! Cathie, I didn't think to tell her to freeze them. Why not? I freeze regular onion all of the time!

Chopped green onions freeze beautifully. How about deviled mashed potatoes for a freezer recipe? Put in about 1/2 cup of chopped green onion in pot with potatoes for 4-6. Replace milk for mashed potato with light sour cream. Add about 1 tbl dried mustard and a package of equal for every 4-6 servings. Sprinkle top with paprika and run under broiler until puffy before serving.
