Hello Amy,
I do not have 10 posts so I can not leave you a comment on your post. I hope you receive this response.
My favorite cookbook is The Professional Chef by The Culinary Institute of America.
What I like most about this book is it teaches you technique, which allows you to learn HOW to cook. The book is also filled with great recipes and very nice photographs.
It's a useful book that you can find in most good bookstores or on Amazon.
Enjoy!

Hi, FoodFriend! Western NY, huh? I'm a former Buffalo gal, myself, and so is Heavy Hedonist -- she still lives there! Where are you?
I'm surprised you could start a thread, but not comment on one... I must be confused about the rules... Wouldn't be the first time!
Welcome to the BB -- hope you'll be a contributor, as well as a new member!!:D

it's a great book, but also very expensive. Betty Crocker does it for less, haha. But any cookbook you like and relate to can help teach you, if you really use it.
I'd personally like the CIA's garde manger:

but even that is pricey. I do have their pastry Chef book.

I've never seen Garde Manger before. How do you rate it?

This book may seem costly, but because it teaches technique makes it (in my humble opinion) invaluable. A one time investment yields a lifetime of great cooking.

I was interested in one reviewer's comment that the recipes in Garde Manger were not as good as those in previous editions and often hadn't even been tested before being included. Observations like that make me leery of buying the book!

I'm just replying as another former WNYer. I grew up where Heavy Hedonist lives now, but now I live in Maryland on the shores of the Chesapeake Bay.
Welcome!

Hey...found your thread! Thanks!
I was off the computer for the weekend, so I'm just checking in now! But, thanks for the recommendation(s). I have so many new and different books to check into - I'm so excited!! Now, I just need a bigger house to hold them all! :D

I understand your need for a bigger house, sprinklesteen. I've converted the bedroom off my living room into a library.
