View Full Version : What to do with Left-Over Rice?

I have a lot of extra rice - already cooked - and was wondering if anyone has a yummy recipe that they could suggest for left over rice? Something that would be easy and call for ingredients that may be in my fridge or cabinets already. (Hoping to Not have to go to the grocery.) Please help if you can!!

I've never made fried rice and would very much like to try it. What a great idea. I'll be sure to check out epicurious for that.
And, I am going to make the rice w/ beans tonight with black beans! I love beans too so it's a perfect fit! And I have canned fresh tomatoes from my garden from last year. I think the recipe sounds yummy.

You could also try the Fried Rice with Smoked Ham from May 2000. I've made this a few times and its quite good and doesn't call for anything unusual. It does say basmati rice - but I bet whatever you have would work fine too.

Of course I cannot remember the issue date--but last winter--December maybe? The issue with the traditions of different celebrities? Malachy McCourt had a recipe for fried rice that sounded good. I am talking CL of course. Can anyone help me out here?

The recipe you are referring to was in the December 1999 issue and it is called Shrimp Fried Rice. Hope that helps. Let me know if you need the recipe.

Here's the recipe for Malachy McCourt's Shrimp Fried Rice (December 1999, pg. 110)
Perfect fried rice depends on chilled cooked rice.
3 tablespoons low-sodium soy sauce
2 tablespoons water
2 tablespoons rice vinegar
1 teaspoon sesame oil
1/4 teaspoon salt
1/4 teaspoon crushed red pepper
3 tablespoons vegetable oil, divided
1 1/2 pounds medium-shrimp, peeled and deveined
3 large eggs, lightly beaten
2 cups finely chopped green onions
1 tablespoon minced peeled fresh ginger
4 cups cooked long-grain rice, chilled
1 1/2 cups frozen green peas, thawed
1. Combine first 6 ingredients in a bowl.
2. Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add shrimp; cook minutes or until done. Remove from pan; keep warm. Heat 2 tablespoons vegetable oil in pan. Add eggs; stir-fry 30 seconds or until soft-scrambled, stirring constantly. Stir in onions and ginger; stir-fry 1 minute. Stir in soy sauce mixture, shrimp, rice, and peas; cook 3 mintues or until heated.
Yield: 6 servings (serving size: 1 1/3 cups).

Fried rice with ham
2 tab peanut oil
1/3 c thinly sliced grren onions (including tops)
1/2 tsp peeled and minced fresh gingerrot
1/2 tsp minced garlic
2 eggs lightly beaten
1/2 tsp salt
1/4 tsp sugar
1/3 pound finely diced cooked lean ham
1/2 c frozen tiny peas
2 tab soy sauce
2 cups cold rice
1/2 tsp sesame oil
Hat oil in wok or large skillet. Add next 3 ing & stir fry 1 minute, add eggs scramble loosely breaking them with spatula. Add next 5 ing & stir fry 2 minutes. Add rice stir fry until hot. Add sesame ouil stir and serve
*you can reheat fried rice. But always make fried rice with COLD rice.
NOte
You can add leftover vegetables or chicken , pork, ham etc to stir fry rice.

I frequently make fried rice from leftover rice using the following:
chopped scallions (green onions)
bacon bits or ham slivers or chicken slivers or pork slivers or tiny shrimp
beaten egg (scrambled in an empty spot in the frying pan then chopped and mixed in with the rest of the stuff)
peas
broccoli and/or slivered carrots and/or cauliflower and/or green beans and/or asparagus and/or spinach and/or zucchini and/or crookneck squash
low sodium soy sauce
use whatever appeals to you. I usually start with the rice, cook the eggs, then add the rest. the meats (bacon, chicken, etc.) must be pre-cooked. the hard veggies like broccoli, beans and asapargus should be pre-cooked a bit. add the soy sauce last, a bit at a time. good luck!

We love this recipe!
SPINACH, RICE AND FETA PIE
2 tsp margarine
3/4 c chopped onion
2 tsp all-purpose flour
1/2 tsp salt
1/4 tsp pepper
1 1/2 c 1% low-fat milk (used skim)
2c COOKED long-grain rice
3/4 - 1 c crumbled feta cheese
1 large egg, lightly beaten
2 large egg whites
1 10 oz package frozed chopped spinach, thawed, drained and squeezed dry
2 T grated Parmesan cheese
Preheat oven to 400.
Melt margarine in a large saucepan over medium heat. Add chopped onion, and saute 3 minutes. Stir in flour, salt and pepper. Gradually add milk, stirring with a whisk until well-blended. Bring mixture to a simmer, and cook 1 minute or until slightly thick, stirring constantly. Remove saucepan from heat, and stir in the cooked rice, crumbled feta, egg, egg whites and spinach.
Pour mixture into a 9-inch pie plate coated with cooking spray. Sprinkle Parmesan cheese over pie. Bake pie at 400 degrees for 30-35 minutes or until set. Broil 2 minutes or until pie is golden brown.
makes 6 servings at 198 cal, 6.7 g fat, 10 g pro, 24.8 g carb

Oh my Gosh!
Marcie, I was just talking to my sister Connie about my left-over rice question and she - excitedly - said "You can make Spinach Rice & Feta Pie!" - which I had completely forgotten about. (We both LOVE spinach & feta!) Luckily, I have enough rice to make the pie and the beans & rice tonight. Now I need to make room in my fridge for the fried rice I want to make!

Can't give you specific recipes since I can't find them! However, we've made some praline-type pancakes mixing about a half cup of cold, cooked rice into the batter, then cooking the pancakes as usual. My wife also suggests using leftover rice for rice pudding.

Wow, Jeanne, this is weird- I was just looking up recipes for fried rice. It says the secret to fried rice is cold leftover rice. I was even thinking of making some for dinner myself. I don't know if CL has any recipes, but there were a bunch on Epicurious.com- some vegetarian, some with seafood or meat. Or you could make something to serve over the rice, like a chicken stir fry or a jambalaya.

Here's a recipe that is good for using whatever you have around the house - you could throw in veggies and/or meat, any type of bean, and use canned tomatoes if you don't have any fresh. It's not a SPECTACULAR recipe, but it's quick, easy, and healthy.
COMPANY RICE WITH BEANS (from Jane Brody's Good Food Book)
1 cup rice, brown or white
2 cups water
1 tablespoon oil
1 medium (2/3 cup) onion, coarsely chopped
2 cloves garlic, crushed or finely minced
2 medium tomoatoes, finely diced
1 medium (1/2 pound) zucchini, coarsely chopped
1/2 teaspoon oregano
1 16-ounce can beans (kidney, pink, black or garbanzo), drained
salt, if desired, to taste
freshly ground black pepper, to taste
1 cup shredded cheese (I use cheddar)
1. In a medium saucepan, combine the rice and water, bring the mixture to a boil, reduce the heat, cover the pan, and simmer the mixture for 20 minutes (35 minutes for brown rice). Keep the pan covered until the vegetable mixture is done.
2. Meanwhile, heat the oil in a large skillet, add the onion and garlic, saute them until they are soft. Add the tomatoes, zucchini (or broccoli), and oregano. Cover the skillet, and simmer the mixture for about 5 minutes or until the vegetables are tender-crisp. Add the beans, and simmer the mixture, stirring occasionally, until it is heated through. Season with salt, if desired, and pepper.
3. To serve, spoon the vegetable-bean mixture over the hot rice, and sprinkle the cheese on top.

Just wanted to let you know, we tried the Spinach, Rice, and Feta Pie last night. It was great! I actually had some leftover chicken breasts so I diced those and added them. I used the egg whites and egg substitute for the whole egg. I will definitely be making different variations of this often. It was so easy and really good.

I like to heat up my leftover rice in the microwave, and then add some chunky vegetable salsa (any favorite brand)and a little shredded cheese. This is about as easy as you can get!!!!
