I have some blue cheese in the fridge...any suggestions for a tasty side dish with veggies?

Not a dish for veggies, but I really enjoy a salad with butter lettuce, diced granny smith apples and blue cheese (or better yet, gorgonzola). Its great with a simple vinagrette.

One of my favorites is sliced ripe tomatoes topped with crumbled blue cheese...we always serve this on the side with a grilled flank steak. I also make the salad idea mentioned above and use pears as well. YUM!

I think bleu cheese seems to compliment yummy caramelized onions, whether it be on a salad or on a pizza!!!

there was a recipe for mashed potatoes with blue cheese and parsley from several months back. We loved it.

Have I got a recipe for you. This is not exactly low-fat, but it is wonderful. You can make half the recipe very easily. Serve it with thin slices of a crusty french bread.
Bleu Ribbon Dip (makes 1 1/2 cups)
8 oz bleu cheese, crumbled
2 cloves garlic, crushed
1/2 cup dark olive oil
2 TBSP red wine vinegar
1 TBSP lemon juice
1/2 cup red onion, finely diced
1/2 cup fresh parsley, minced
1/4 tsp freshly ground black pepper.
Combine all the ingredients at lease 1hr before serving and keep refrigerated.
