I have gotten an easy, but good, recipe for eggplant. I have never bought an eggplant and am wondering what am I looking for i.e. size, firmness etc.

You want to choose an eggplant that has a glossy exterior and a firm feel. Egglplants vary in size so if your recipe has a weight suggestion, try to stick with that.

It isn't exactly a recipe, but here is what it is..
Cube an eggplant
Saute with, garlic, onion in olive oil
when cooked, add a choppedtomato or 2, depending on what you like
cook until heated through
S&P to taste
It is supposed to be very easy and a good "get into eggplant" type of thing

I personally like small eggplants, or Japanese eggplants. IMHO, they arent as bitter.

I was watching a cooking show (I think Cooking Live) and they mentioned there were male and female eggplants. I think the male was the one that had more seeds.

Just have to thank you for this "recipe"! My dh actually ate eggplant and liked it!!! He was extremely reluctant, and then so relieved when he discovered it was good!!! Thank you for posting this! :D

A cooking light article had once said that there is no such thing as a female or male eggplant. However, I believe that female and male eggplants do exist, and the way you can tell is to look on the bottom of the eggplant. A small, brown circle is a male eggplant, and an oval shape will be a female eggplant (which has more seeds).
