I found this recipe on

www.blogyourlighterside.com

a different spin on the Cauliflower Crust Pizza.
DH loved it, he hates pizza~don't ask, but he enjoyed this for lunch today.

After baking the crust, I nuked (only because I was short on time but it worked) some finely chopped items: more spinach, red peppers, mushrooms, and cooked chicken
Topped the crust with the above, sauce and a tiny bit more of cheese.

Spinach Pizza Crust
Induction friendly
It's so easy being green

This recipe makes about a 12" crust

1 cup loosely packed, fresh spinach
1 egg
1 cup loosely packed mozzarella cheese
1 tsp dry basil
1/2 tsp oregano

Preheat oven to 425 degrees Fahrenheit.

Chop the fresh spinach leaves (or pulse in the food processor). Mix with the rest of the ingredients.

Spread dough on a lightly sprayed pizza pan (I use olive oil Pam).

Bake for 12-15 minutes or until edges begin to brown.

Sounds yummy and nutritious :)

What did you top it with? so you bake the crust and then top it and toss back in oven??

I finely chopped and nuked items. After topping I broiled it lightly. It was a quick lunch, a bonus for us.

sorry if my question is silly......so you make the crust and it is not cooked, top it, then cook it all?

I may make this in the next few days :)

Right, you bake it; then add the toppings and broil. You got it! I nuked the raw veggies and heated the chicken first so that when it broiled, I didn't have uncooked veggies. We love spinach but it didn't overpower the flavor of the crust, it was still crunchy. Good luck and let me know.

I have a similar recipe that uses a 10 oz box of frozen spinach. Could that be substituted in this recipe as well?

Ali, I used fresh, personally I think the frozen might be too strong a flavor, but it is worth a try- what do I know?

Not too many ingredients to try it. Let us know!
