View Full Version : Mexican cheesecake appetizer?

Has anyone heard of this animal? I had it once at a party and my hubby loved it! I think it had cream cheese, cheddar cheese and a bunch of other stuff in it; it was baked in a spring-form pan. Definitely not light, but delic!

EXAS CHEESECAKE WITH BLUE CORN TORTILLA CHIPS

2/3 cup finely crushed tortilla chips
2 tablespoon margarine, melted
1 cup cottage cheese
3-8 ounce packages cream cheese, softened
4 eggs
2 1/2 cup shredded sharp cheddar cheese
1-4 ounce can green chilies, drained
1-8 ounce carton. sour cream
1-8 ounce carton. jalapeno cheddar dip
1 cup chopped tomatoes, for garnish
1/2 cup chopped green onions, for garnish
1/2 cup sliced ripe olives, for garnish


Preheat oven to 325°F (160°C). Combine chips and margarine; (I
sometimes do more than the 2/3 cup crumbs) press onto bottom
of 9" springform pan. Bake for 15 minutes.

Place cottage cheese in food processor or blender container;
process until smooth. In large bowl of electric mixer,
combine cottage cheese and cream cheese, mixing at medium
speed until well blended. Add eggs, 1 at a time, mixing well
after each addition. Blend in cheddar cheese and chilies.
Pour mixture over baked crust. Return to oven and bake 1 hour
or until set in center.

Combine the sour cream and cheddar dip; mix thoroughly.
Spread mixture over hot cheesecake; return to oven and
continue baking for 10 minutes. Cool for 30 minutes in oven,
remove, cool completely before refrigerating. To serve, loosen
rim of pan. Top cheesecake with a ring of tomatoes, green
onions and black olives. Surround with blue corn tortilla

I think that is an excellent idea--it did cross my mind as well. Lets see--reduced fat cheddar cheese, low-fat cream cheese and cottage cheese and sour cream--. Oh, and egg substitute. I'm drawing a blank as far as the tortilla chips are concerned. Maybe CL can figure out a different ratio for those things as well.

Oh, wow, please submit this! I want to make it too! It sounds awesome! I can see using reduced fat products, but that may change the consistency somewhat. I bet CL could make it great.

Jeannette- I would personally love to submit this recipe so that I can make it and not feel guilty about eating it, but I don't want to step on anyone's toes- if they do use the recipe and are able to lighten it up, they send the person who sent in the request a free cookbook. Jill, great idea! I checked out the "call for recipes" this morning--was really surprised that they didn't have a computer access way to do it. Anyway, don't anyone worry about toes--heck, right now, I'm just trying to find CL on the magazine racks! My favorite grocery stores didn't have it yesterday.

BTW, if anyone is interested I have a really lite sweet cheesecake recipe that was posted on one of the Weight Watcher sites. Haven't tried it yet myself, but it sounds good and like it should work--.
