Paula (browneye) posted this recipe on the Power Vegetables thread a few weeks ago. I made these earlier this week and the pancakes are outstanding. They are the fluffiest, tastiest pancakes I have ever made. The pumpkin makes them puff right up and they are so pretty!

For a dry mix, I used a multi-grain mix from the bulk foods section- so these turned out to be nutritional powerhouse pancakes, as well (and "light"- I used skim milk and there is no oil). I also increased the cinnamon- next time I might add a teaspoon of vanilla.

With real butter and a berry syrup, the pancakes were so delicious. They were also great the next day as a road-trip snack at room temperature with peanut butter. Fire up those griddles!!

Pumpkin Pancakes

2 cups of your favorite dry pancake mix (I use my homemade dry ingredients, then follow the rest of this recipe for the moist ingredients)
1 egg
1 1/2 cups milk
1/2 cup canned or fresh cooked pumpkin
1/2 tsp. cinnamon
Mix all ingredients thoroughly in a large bowl Pour small amounts of the batter onto a hot lightly greased griddle or frying pan over medium-high heat.
When bubbles form on the pancakes and the edges begin to brown, flip the pancakes.
Serve with butter, maple syrup or a little bit of honey.

A HUGE hit with kids and very nutritious.
Makes about 20 4" cakes.

I'm so glad you liked those, Julie. They are a favorite around here this time of year, especially. I have a can of pumpkin in the cupboard just shouting to be pancakized.

I think I always dump a little more cinnamon in than it calls for. THese are also great topped with apple butter. I make apple butter almost every year, too. Gotta get started!

Thanks Paula for posting this originally and thanks Julie for bringing it to my attention (missed the prior thread) -- these look DELISH!!

Now I'm just waiting for somewhat cooler weather before I break out the griddle.

I agree -- these look great, and easy, too. I'll see if I can get the kids to eat them tomorrow AM (the ultimate test). I THINK I have a can of pumpkin back in the cupboard somewhere...

These look yummy. Thanks for posting. I was just thinking about something with pumpkin in it today. Must have been that light frost this morning. Fall is in the air!

I'm up and have made the pancakes, and they ARE yummy! Kids still sleeping (!) so they'll taste test later. More surfing for me.

I just asked Scott is he'd want these soon, even though it isnt fall here...he laughed and said my body clock was just too strong. My body clock, that grew up in the Midwest, will probably always feel it should be fall now, even in the 90 degrees here!

Kim, it's raining and it's cooled off to the 70's to 80. This qualifies as fall, although my dad apparently saw a forecast this morning that were supposed to dip to the 60s this week. I like this (as long as the rain doesn't go too far).

BTW, I have also added pumpkin and pie spices to my favorite waffle recipe, just cutting back on the liquid a little (or sometimes I add a 2-3T of Malt o Meal to the batter -- I like the texture in the waffles). Also very yummy.

Just came across this recipe for Hot Cider Syrup in the latest issue of Taste of Home. It was included with a recipe for pumpkin pancakes. Thought some of you might be interested in it. I'm also including a similar recipe that I found on the net. The one from TOH looks pretty sweet. I bet you could cut back on the brown sugar.

Hot Cider Syrup

Recipe By :Taste of Home, Oct/Nov '01, pg. 40
Serving Size : 0 Preparation Time :0:00
Categories : Syrup or Topping

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3/4 cup apple cider or juice
1/2 cup packed brown sugar
1/2 cup corn syrup
2 T. butter
1/2 t. lemon juice
1/8 t. ground cinnamon
1/8 t. ground nutmeg

In a saucepan, combine all ingredients. Bring to a boil over medium heat, stirring occasionally. Reduce heat; simmer uncovered, for 20-25 minutes or until slightly thickened. Let stand for 30 minutes before serving.


Apple Cider Syrup

1/2 cup sugar
1 cup apple cider or apple juice
2 tablespoons butter or margarine
4 teaspoons cornstarch
1 tablespoon lemon juice

In small saucepan stir together the sugar, cornstarch, and cinnamon. Then stir in the apple cider and lemon juice. Cook and stir the mixture over medium heat till mixture is thickened and bubbly. Then cook and stir for 2 minutes more. Remove saucepan from heat and stir in the butter or margarine until melted. Makes 1 1/3 cups.

I see you are a Mastercook user and I have a quick question for you. Do you enter a lot of your own recipes into Mastercook? I see you entered recipes from Taste of Home or do you get cookpacs for that magazine?

Yes, I enter a ton of recipes into MC. I either type them in (like the first one above) or paste them into the import assistant (like the second one above). I have a lot of different cookbooks that I created. For example, Tried and True Favorites has 306 recipes, Desserts to Try has 309 recipes (can you tell I have a sweet tooth?! :p ), Main Dishes and Side Dishes to Try has 328 recipes, etc. You get the idea.

I made the Hot Cider Syrup that I posted above last night for supper. I served it with pumpkin pancakes (I used the recipe out of TOH magazine that was included with the syrup recipe), sausage links, and fresh fruit salad (apples, bananas, pears, and oranges). It was very good. I was pretty shocked because my 5 year old and my husband loved it! I had to use apple juice though, because I was out of cider. :( It was still great though. Oh, and I also used mace instead of nutmeg.

MMMMMM....after my failed Pumpkin Waffles last week, I decided to try these with Bisquick and they were yummy. The kids were skeptical (you know how kids welcome change :rolleyes: ), but they loved them.

I made them even healthier (though it did at a bit of fat) by using soy milk. My hubby and I had pecans in ours - delicious!

My mom works for a mill where they grind their own flour. They have a buckwheat pancake mix that is awesome. I also tried the pumpkin with those, but it will require some tweaking. The first batch were a bit dry and the batter has no sugar in it. I think you need a bit of sugar to make the cinnamon and spices (I added some nutmeg and cloves) stand out. However, the batch I made today is still quite tasty, so I have lots to put in the freezer for breakfast the next couple of weeks!

I made these myself on Saturday with a combination of leftover pancake mixes I had in the cupboard. (DH buys a new batter mix without checking to see what we still have)....
So, they were part Bob's Red mill pancake mix, and part Snoqualmie Falls mix, and a little Bisquick mix to stretch it all out. Lots of extra Cinnamon, and clove, etc.

Really, really tasty. Everyone loves these at this house.

Lindrusso, so glad your experiments were fairly successful. Wonderful way to get squash and Vit A into those little ones!

I'm reviving an old thread here to say ... these pancakes are so good! I have made them several times since finding the recipe a few months ago. The addition of canned pumpkin makes them seem so much healthier than "regular" pancakes :) They make a perfect fall breakfast. (I know it is not fall, yet, but it is beginning to feel like it here in KY.)

Just adding my kudos to these - I am in heaven after having them for breakfast - my new favorite breakfast treat!

If you think pumpkin in your pancake is a weird idea, just give it a try for tomorrow's breakfast. You'll never go back! :)

Thanks for resurrecting this thread. We have had these many times before and love them. I just happen to have some leftover pumpkin in the refrigerator. Guess what I'm going to make for breakfast??!!:D

Guess what I'm going to make for DINNER???? These sound wonderful and are the perfect solution for the bit of pumpkin I have leftover from making the Pumpkin Chocolate Chip Cookies (bb). I had the Whole Wheat Buttermilk Pancakes (2003 Annual) on the menu tonight with sauteed apples and soy sausage, but I'm going to do these pumpkin ones instead. Thanks for the recipe!

These pancakes are so yummy, Paula! DH is not into breakfast foods at all, but he loves them. And my niece called me the other day to see if she and her sister could come for a sleepover again soon because "Aunt Jodi makes the BEST pancakes ever!" :D :D :p

I think her sister, who's 3, is more impressed that I let her paint my nails and do my hair than she is with my cooking :rolleyes:, but I'll take what I can get!

I made these today, and they were very good. I used a low fat Bisquick mix. Served with maple syrup and turkey bacon. I'll make these again... thanks for the recipe!

I LOVED these pancakes. What delicious flavor! I've made some from the Libby's pumpkin website and they were'nt nearly as flavorful as these. I loved the cinnamon taste! Thumbs up!
