A few years back, there was a great recipe for "fried" eggplant or zucchini which used light mayonnaise as the ingredient the vegetable was covered with before being dredged in some sort of breadcrumb mixture.I loaned the issue of C.L. it was is to a friend, then I moved and never got it back. It was wonderful - tasted just like fried but done in the oven. It probably was in an issue from 1994 or 1995. Does anyone have it? I'm craving it big time! Thanks in advance. J. Ploshay

I don't remember this recipe at all - but it looks wonderful, particularly now when the farmer's markets are full of beautiful eggplants! I may have to try this one soon myself!

Oven Fried Eggplant

INGREDIENTS FOR 4 SERVINGS:
1/2 cup non-fat mayonnaise
1 Tblsp. minced onion
12 (1/2-inch) slices upeeled eggplant (about 1 pound)
1/3 cup fine dry breadcrumbs
1/3 cup grated parmesan cheese
1/2 tsp. dried Italian seasoning
Vegetable Cooking Spray
INSTRUCTIONS:
Combine first 2 ingredients; stir well. Spread evenly over both sides of
eggplant slices. Combine breadcrumbs, cheese and Italian seasoning in a
shallow bowl; dredge eggplant in breadcrumb mixture.
Place eggplant on a baking sheet coated with cooking spray. Bake at 425º for
12 minutes. Turn eggplant over, and bake 12 minutes or until golden.
Yield: 4 servings (serving size: 3 slices)

I will have to look it up, but on CL recipe search, I found a "Crispy Zuchinni Coin" recipe - I think that's what it was called - and I tried it b/c I LOVE fried zuch and it IS http://www.cookinglight.com/bbs/smile.gif fattening. There is no mayo tho, and it's coated with egg whites and then bread crumbs (and as always, I added cornmeal to the coating) Anyhow, the recipe was AWFUL. But, instead of pitching it, I layered it with mozz cheese and marinara sauce (x 2) and then topped it with sauted mushrooms, onion and red pepper. Then bake it. The result was AWESOME!!! I have two more good sized zuch to work with tomorrw and make it again and freeze it. Everyone loved it, and it saved me from pitching good food!! If it interests you, I'll find the recipe for the 'coins' and post it. Good luck!!

I haven't tried the mayo recipe, but the crispy zuchini coins are really good. I throw some extra spices in (but then again, I do that with a whole bunch of stuff!).

I do not recall which issue it was in, but I make an oven fried eggplant recipe from CL that calls for coating the eggplant slices with reduced fat mayo and breading them with crushed saltines;you refrigerate them before baking which helps to make them crisper. As I recall they are baked in oven at 425 degrees for about 10-15min per side or until crisp. If this sounds like the recipe, let me know. I can look up the exact details and list them. By the way I have also used this technique and this coating or variations of it on fish and chicken in the oven and it turns out very tasty. Just an idea for a quick dinner.
