View Full Version : What should I make with my Tilapia tonight???!!

Hi everyone

I almost never make fish - our family almost never ate it (except herring, which I love!?) so I never aquired much of a taste for it, but my husband loves seafood, and it's so healthy, and so I am trying to incorporate more of it into our everyday diet. I am making Caribbean Mango Tilapia (a CL recipe from Jul/Aug 99 issue) for dinner tonight, but have no idea what to make with it. We love all sorts of food, but I don't cook much "Caribbean" type stuff, and don't know what would go well with that dish. Any suggestions? Thanks in advance!

And perhaps a colorful slaw, made with a vinegarette dressing.

ooh, if it's carribean night and you can get a hold of a ripe plantain, peel and slice on diagonal; then saute in small amount of oil or butter. Be careful not to turn heat too high as they can burn easily due to sugar content. I season each side with a dash of freshly grated nutmeg and allspice. You can also make them into "tostones" by smashing them to flatten after sauteeing them and resauteeing them a second time. If you get a nice ripe plantain, you'd swear there was extra sugar added.

Hi everyone....thanks so much for all your replies and good ideas! I ended up making the yellow rice and some broccoli on the side (how boring and unimaginative), but I love the idea of the plaintain, and I will definitely try that next time.

The recipe was ok. The mango marinade called for 1/3 cup cider vinegar, which already seemed like a lot to me, so I adjusted it down to 1/4 cup, but that was still WAY too much! The vinegar made the sauce gross by itself, but the fish that was marinated in it tasted fine after it cooked (don't understand that one, since I cooked the leftover marinade in a saucepan on the stove for 10 minutes trying to boil away that vinegar - it didn't work), but like I said, the fish was good - very mild. I would definitely repeat this and OMIT the vinegar altogether! Thanks again for all your ideas!
