Enchilada Casserole and Spicy Black Beans-CL-J/F/12

Neither of these were outstanding. The casserole was just too different (not very southwestern, in flavor) to be interesting and the beans were just ho-hum. Neither will be a repeat, but they are good enough to finish the leftovers.
