Hi,

I have gone crazy about wraps lately.

Can anyone who has great testing Wraps Recipes post them here.

Also, if you know any great websites, please let us know the link.

hi helen, a couple of mos. ago CL had wrap recipes, have you tried them? i made the one w/ blue cheese & loved it. i often make wraps for lunch & use different salad dressings instead of mayo/mustard.

i have been away from this BB for awhile, so i'm sure if this had already been addressed.

The article about Wraps was in the June 2000 issue. The ones I made were the: Ginger-Peanut Chicken Salad Wraps, Blue Cheese-Pepper Steak Wraps, and the Barbecued-Chicken Quesadillas. All were good especially the Ginger-Peanut Chicken Salad recipe. Do you have that issue? Let me know if you need the recipes.

*Turkey Pinwheels

2 Burrito-size flour tortillas
1 & 1/2 c. salad greens
12 slices (4oz.) deli-thin turkey breast
4 slices American cheese
2 plum tomatoes, sliced
1/2 c. alfalfa sprouts
1/2 avocado, thinly sliced (optional)
1/4 c. low-fat mayonnaise
1 T. pickle relish
1 T. ketchup
Top each tort. w/ salad greens. Arrange a layer of turkey, cheese, tom., sprouts, &
if you like avacado, onto each tortilla, leaving one or so inches empty at bottom. Combine mayo, relish & ketchup together &
blend; drizzle dressing over both tortillas.
Roll up & slice each into 8 slices.
*It can be lunch for 1-2 people.You can also use your own favorite salad dressing instead of this one, and i do sometimes.

They all call for steamed rice but I don't care for rice in mine, (not sure, but I bet they use it as a "filler/stretcher" anyways, lol). You could add it if you want.
*Teri-chicken breast-Charbroiled breast, w/ chopped onions, lettuce, tom. & teri-sauce.
*Tuna-Light tuna salad or chunks, with lots of chopped lettuce,tom., & green onion, and shredded cheese.
*Pesto-chicken -Boiled shredded chicken breast, w/ bell pepper, blk. olives, lettuce, tom., & pesto dressing/sauce.

For a hiking trip picnic recently I made what I called Hummus Wraps.

I spread Hummus dip (the White Bean Hummus dip from May? 2000 with extra garlic and green onion) on the tortilla. I cooked up some chicken in a lemon garlic marinade. Added spinach, feta, and red onion. Nothing runny so worked nicely for a picnic.

I've also made a Parmesan-Ranch Wraps. Light ranch dressing on the tortilla, cooked pork, parmesan cheese, romaine lettuce and red onion. I don't make these often as they're higher in fat than what I normally want. I think these might have been similar to a recipe in the CL article.

Actually, I'd guess that almost anything that has some bulk and/or crunch to it would be a good candidate for a wrap. Last week, for example, I made the Garden Vegetable Stir-Fry with Tofu from the August issue, and instead of serving it with rice or noodles, I wrapped it in flour tortillas (I didn't have and rice paper wraps). Great! At other times, I've wrapped grilled veggies, as well as beans and rice. So if you find an especially good combo, be sure to let us all know!

I like chicken caesar salad wraps. Though we like to add feta cheese to these.

Another general idea for wraps is to take the flavored cream cheeses or gourmet spreadable cheeses (garden herb, garlic, etc.) spread on a tortilla and fill with luncheon meat and cheese of your choice, tomatos and shaved carrots and lettuce. Fold up and the key is to GRILL. Absolutely delicious!

Lately I've been making salads and taking the leftovers for lunch the next day as a wrap (makes it easier to eat). The types of salads that work best are the ones that have beans and grains, although lettuce salads work, too. If they don't already contain lettuce, tomatoes or cheese, sometimes I'll add that to the wrap.

A delicious wrap that my husband and I eat often consists of vegetables (zucchini, onions, mushrooms, peppers) marinated in lemon juice, oregano and olive oil and grilled. You can add chicken to the mix if you like. Wrap and top with basil-feta sour cream. Mmmmm....

One of my favorite wraps comes from CL, however, I did not write down which month on my recipe card. Anyway, it is called Crunchy Vegetable Wraps and includes the following ingredients:
Fat free cream cheese
Curly lettuce leaves (Boston lettuce, Red leaf lettuce)
Alfalfa sprouts
red cabbage
tomoto
feta cheese
red onion

You just spread cream cheese on the tortilla and top with remaining ingredients. Then cut it diagonally and serve. Sorry this is so imprecise on measurements, but I eat this so often because it is so easy that it is hard to judge how much I use. Also, I don't have the nutritionaly analysis (I am so bad about keeping that info!). Enjoy!
