Anyone have recipes for a clay pot? I bought one a couple of years ago but never use it.

Laden, you sound like me! My brother bought me a clay pot about 5 years ago and I think I only used it once, to make a jambalaya. It did come out rather good. He bought me a small clay pot cookbook also, but unfortunately, I haven't taken it out in years. I saw that you can make bread in a clay pot and I've been wanting to try that. I'll be interested to see what responses pop up here.

I like the claypot for poultry (Turkey breast with a dry-rub marinade is exceptional)and for whole fish. I tried the CL recipe for roast lamb with Jeruselem artichokes in the clay pot last year and it worked fairly well. Most of the recipes in the little book that come with your pot are fairly low fat or can be lightened up easily enough. Because of the high baking temperature, I only use mine in the winter.

Someone mentioned roasting veggies in a claypot a while back on this board - maybe that person could comment on how to do that because it sounded good and healthy. I'm glad you started this thread because I have a clay pot I've never used and now I'm inspired to pry it from it's space high on my kitchen shelf!

You can make almost anything in a clay pot. You'll want to watch your cooking time, as things can get done a bit faster when cooking with clay/stoneware, but other than that it works great for tons of things.

Try baking a chicken in your pot (if it's big enough). Make a casserole. Or scalloped potatoes.

Experiment. Clay makes gorgeous meals, and I think you'll find you really like the results.

My aunt gave me a good and simple recipe that was made at a dinner party given by a couple of "hippie" friends many years ago. I tried it and it was quite good.

Soak the top & bottom of the clay cooker for a minimum of 15 min.

Take 1 package of Uncle Ben's Long Grain & Wild Rice mix and put it in the bottom of the cooker, check the instructions for how much water to use and replace 1/2 the water with white vermouth.

Take 2 cornish game hens and add salt and pepper the outside and inside the cavity. Put on top of rice mixture.

Put covered cooker in cold oven, turn oven to 400 and cook 2 hours.
