Well,-I-cooked-for-my-new-mom-friend:Bree's Lental Tomato Soup; Corn Casserole, Broccoli Casserole, and Spicy Pumpkin Bread (double-batch)---------------------SUpper Club is tonite, so I made Tuscan Bean Salad-and-Apple Cake,and company is coming tomorrow for lunch AND dinner, and we will have SPaghetti Squash Casserole for lunch and Pumpkin Pancakes-with soy-sausage for dinner.----------------Guess-my-cooking-dry-spell-is-over!!!!! ps thought I'd clean up the dashes while the space bar is deciding to work........

Sounds good! I especially like the sound of that spicy pumpkin bread. I love the fall!

Kim, just wanted to say... YOU POOR GIRL! :(

That would be driving me up the wall, to have to type all kinds of crap in order for the words not to run together -- get that thing fixed already! ;)

BTW, where is that squash casserole from?

The-pumpkin-pancakes-are-tomorrow-night.....for-our-friend-Steve-who-is-trying-them-because"anything-you-make-will-be-good"....he-is-so-suspicious! Emily, I got the casserole off the board...here is it! I just love how the space bar starts working when it feels like it! The enter and backspace, however, NEVER work anymore!

Spaghetti Squash

Amount Measure Ingredient -- Preparation Method

1 8" spaghetti squash
1 c. chopped onion
2 med. cloves crushed garlic
2 med. sized fresh tomatoes
1/2 lb fresh -- sliced mushrooms
1/2 tsp oregano
salt & pepper to taste
1 c. cottage or ricotta cheese
1 cup grated mozzarella
1/4 c. fresh chopped parsley
1 tsp. basil
1 dash thyme
1 cup fine bread crumbs (preferably fresh)
butter or olive oil for saute
fresh grated parmesan for top

Preheat oven to 375

Slice squash in half lengthwise and scoope out seeds. Bake it, face-down,
on a cookie sheet sprayed with non-stick spray for about 30 minutes or
until easily pierced by a fork. Cook until handleable. Scoop out insides
into large bowl.

While squash bakes, saute onions, garlic, salt, pepper, mushrooms,
parsley, basil & thyme in butter or olive oil. When onions are soft, add
tomatoes. Cook until most of the liquid evaporates. (Or, if you don't want
to wait that long, just pour the veggies through a sieve to remove excess
liquid before you combine them with the rest of the ingredients.)

Combine all ingredients except parmesan. Pour into 2 quart casserole (you
may need a larger one!) that has been sprayed with cooking spray. Top with
parmesan (again, use whatever suits your diet!!). Bake for 40 minutes,
uncovered.

Kim, is the calorie and fat count just for the squash? It lists 16calories and a trace of fat. Vicky Sounds very deelish.
