TJ's CUrry SImmer Sauce - Crockpot Question

Okay - I now have several jars of TJ's curry simmer sauce and am dying to crock pot with it. NOW my question is how long can you let it simmer? Would 9 hours on low for chuncks of chicken be too long? What vegetables should I add.

How about potatoes, carrots & green beans or broccoli? I don't use the crockpot as much as I would like and I would be interested to see how this turns out for you. I think there are recipes for indian rice dishes that would be good and naan. A flat bread that TJ's is carrying.
