Has Cooking Light published any good recipes for Paella and Tapas? I am looking for recipes for this weekend. Please share if you've tried any of these recipes.

CL featured paella earlier this year, but I don't remember the exact month. May, maybe? I remember seeing some reviews and alterations on the BB. (most everyone liked it, although I haven't tried it yet) If you do a search, hopefully you can find the thread easily.

They've actually done several paella recipes over the years. I just did a spanish themed party not long ago, and I ran a search on this board and got so many unbelievably good ideas. Do a search, you'll be overwhelmed with good recipes and helpful reviews and ideas.

I made the seafood paella...from the August issue. It was really good! I highly recommend it.

I also made the August issue paella dish this weekend - it was fantastic. My DH and I have been to Spain a number of times - I could live on tapas forever. He was extremely expressed with the paella - I actually made it into a seafood and meat one by substituting the squid for chorizo sausage, and that was only because none of the supermarkets near me do squid and I wanted one more element to go with the shrimp and fish pieces.

Anyway, stuck to the recipe 100% apart from that - great - so easy - so quick.

Interestingly, I have a tapas cookbook by the author of that August paella recipe, Penelope Casas. One of her easiest tapas is to buy chorizo sausage (preferably already cooked) cut into thickish slices - buy a package of puff pastry, roll out and use a smallish cookie cutter to make circles. Sandwich a piece or two of sausage between two discs, seal edges with beaten egg, use a fork to press down, brush with milk & egg to get a nice brown color when you put in the over for 10-15 minutes. Great tapas snacks.

Another authentic tapas is Catalan bread. Buy a loaf of ciabatta - cut into biggish pieces, toast slightly, take a garlic glove and rub on toasted side - then drizzle (or even better, spray) olive oil on toast, slice a tomato and again, rub cut side of tomato over bread vigorously to release juices and flavor to seap into bread. Put back under grill very briefly to warm again and serve immediately.

Other recipes to search for are Patatas Bravas (spicy tomato covered potato pieces) and simply go to the deli counter and buy good quality proscuitto ham and serve over melon slices.
