View Full Version : ISO: Good Vegetable Broth Recipe - ASAP

I finally got my new freezer and I bought an 8-quart stock pot. I want to make a massive quantity (well 8 quarts) of vegetable broth and freeze it in small quantities to use for risottos, soups, etc.

Does anyone have a good recipe for a nice basic vegetable broth.

I am heading home in an hour and want to stop by the supermarket on the way home to gather ingredients.

Here's one from CL Complete:

Fresh Vegetable Broth

5 qts water
3 cups chopped onion
2 cups chopped carrot
2 cups chopped celery
2 cups chopped parsnip
1 cup chopped leek
12 black peppercorns
4 unpeeled garlic cloves
3 bay leaves
2 thyme sprigs
1 basil sprig
1 rosemary sprig
1 parsley sprig
1 tsp salt

1. Combine all ingredients except salt in an 8-qt stockpot. Bring to a boil. Reduce heat; simmer, uncovered, 4 1/2 hours. Strain through a cheesecloth-lined collander into a bowl. Discard solids. Stir in salt. Yield 7 1/2 cups stock.

Thank you Sneezles - that is perfect. The recipe even makes the perfect quantity.

I'll let you know how it turns out.
