Crisps are one of my favorite desserts :) I have tons of crisp recipes. This one was pretty good. I love using oats for the crumble..it adds great texture.

My changes:

I halved the sugar and it was sweet enough for me :D

I halved the oil and substituted honey which was very yummy.

I added cinnamon to the crumble.

I made this last night and we really enjoyed it. I also cut back on the sugar- it was plenty sweet.

The thought of adding canola oil turned my stomach, so I substituted 2 tablespoons of melted butter. It was more than enough moisture and fat for the topping- I can't imagine using more!

I loved the oats, too! The tart cranberries were wonderful.

I made this last night and took some of JeAnne and KValley's suggestions. I added only 1/4 cup sugar to the fruit and cut the sugar a bit in the topping. I used canola oil but only 2.5T. My DH loved it--I am not a big fruit dessert fan so I am not a good judge of these things. I wish I liked those desserts more as they are healthier than the chocolate things I like.

DH said it was the perfect match of sweet and tart and he far preferred it to the Harvest Pear Crisp. He also liked the generous amount of topping and did not seem to notice it was a little dry, maybe because he put frozen yogurt on top.

What a kwinkydink! :D I made this one for the first time on Sunday! I remembered there were issues with the oil, and the thought of oil was somewhat repulsive, so I used some butter instead. Just enough to moisten but not soak.

I kept the sugar the same as I was using braeburns and gala apples. But I added cinnamon and nutmeg. I couldn't imageing a baked apple dish w/o cinnamon!

I liked how quick and easy this was to pull together. Just perfect to satisfy that after dinner sweet craving. :rolleyes: ;) :D

I made this when it first came out, but I was craving it the other night and made it again. After reading JeAnne's substituion of honey for 1/2 the butter, it inspired me to try pure maple syrup in the topping. It worked great!! I would have never thought to do that had I not read JeAnne's post! I also added an extra apple and some cinnamon and fresh nutmeg. You have to really like cranberries to like this. It comes out pretty tart. It would be great with vanilla ice cream, but I've just been warming it up in the microwave and eating it plain for breakfast. :D I know this is a dessert but I think it would be good served at a fall brunch. Also, my apples stayed a bit crisp/tender but this didn't bother me. I think you could mix different tart apples with the granny smiths and it would be good.

Apple-Cranberry Crisp

Recipe By : I adapted from a Cooking Light recipe

Amount Measure Ingredient -- Preparation Method

3 or 4 cups cubed Granny Smith apple (about 3 or 4 med. apples)
2 cups fresh cranberries
1/2 cup sugar
1 teaspoon cinnamon
freshly grated nutmeg, (about 1/4 teaspoon or to taste)--optional
Topping:
1/3 cup whole wheat flour
1 cup regular oats
1/2 cup packed brown sugar
2 T. butter
2 T. pure maple syrup (or honey)

Preheat oven to 350 degrees.

Combine the first 5 ingredients in a medium bowl; spoon into an 8 inch OR 9 inch square baking dish coated with cooking spray.

Lightly spoon the flour into a dry measuring cup, and level with a knife. Combine flour, oats, and sugar in a bowl.

Melt butter in a glass 1 cup measuring cup in the microwave. Add the maple syrup. Slowly pour this mixture over the oat mixture and stir with a fork until crumbly. Sprinkle over the apple mixture.

Bake at 350 degrees for 40 minutes or until golden and bubbly. Serve warm.

Store leftovers in the fridge.

Linda, thanks for your post! I make this recipe often, and missed JeAnne's thread the first time around. Honey sounds good, and I always have local maple syrup in my fridge, so I'll be sure to try one of those substitutions next time around. :)
