I had a head of cauliflower to use and decided to make the Cauliflower and Red Pepper soup from Oct 2001.

It was really easy and quick to make and used ingredients that I had on hand mostly.

I would rate it a 6 on a scale of 1-10. It was good, but not great. It was low on spices and had no garlic which I think would improve it.
Also, the addition of 1 tbs of dried basil was a bit overwhelming. If I were to make it again, I might try fresh basil instead. I also might add some white beans to thicken it a bit and to add some protein.

Overall, good use for cauliflower, but not a new favorite.

While I like cauliflower, I've never found a cauliflower soup that dazzled me. They always seem to be lacking in flavor, probably because cauliflower itself is so mild. Maybe it's not meant to be in a soup. If anyone has a recipe to change my mind, I'm up for it!

I tried the soup and made it a day ahead since the recipe said that it needed time to meld. It was much better the next day and we liked it. I added some Cajun seasoning which help a lot so we thought it was good if not terrific.
