View Full Version : Blackberry Balsamic Chicken Breasts

Just wanted to share with everyone a great recipe I made over the weekend. The sauce is very tasty but not too sweet, and very easy at that! I don't have nutritional info, but as you'll see, it is very low in fat with only 2 tsp of olive oil added.

Blackberry Balsamic Chicken

2 tsp olive oil
1/2 small red onion, chopped
2 tsp minced fresh thyme, or 1-1/4 tsp dried
4 boneless, skinless chicken breasts (about 1 lb.)
1/3 c seedless blackberry jam
1 tbsp balsamic vinegar
1/2 tsp salt
1/4 tsp black pepper

Warm oil in large nonstick skillet over medium heat. Add onion and thyme; cook 5 minutes, stirring. Add chicken; cook 4 minutes, turning once. Add remaining ingredients; stir just until jam is dissolved. Reduce heat to low; cover and cook 10 minutes until chicken is just cooked through. Serve chicken drizzled with pan juices.

Note: I added a little cornstarch to thicken the sauce; it was pretty liquid without it.

Yes, this recipe is almost identical to the Raspberry Balsamic Chicken except the obvious - raspberry instead of blackberry jam - and the Raspberry recipe calls for 2 T. of balsamic. The preparation is a tiny bit different as well.

I just made the Raspberry recipe a couple of nights ago - it's one of our favorites that I make regularly! Easy, low-fat and delicious - can't beat it!

Your recipe is very similiar to a CL recipe I tried about a month ago (Raspberry Balsamic Chicken), I never thought to use another flavor preserve. Thank you for your feedback.
