I'd like to make it for dinner tonight and don't have my issue with me to take to the grocery store.

Sure thing! I just made them and I must say, they are yummy!

CREAMY SPINACH & MUSHROOM SKILLET ENCHILADAS
---
2 tsp olive oil
1 tsp bottled minced garlic
1/2 tsp chili powder
1/2 tsp ground cumin
8 oz. sliced mushrooms
1/4 tsp salt
6 cups baby spinach
2 tbsp reduced-fat cream cheese w/onion & chives
16-oz bottle green salsa, divided
8 corn tortillas
1/3 cup reduced-fat shredded Monterey Jack cheese
sour cream & cilantro for garnish

Preheat broiler.

Heat olive oil in large skillet and add garlic, chili powder, cumin, and mushrooms. Saute for 5 minutes and drain. Add salt and spinach, cooking until spinach is wilted. Add cream cheese and cook until cheese is melted. Remove mixture from heat and set aside in a bowl.

Put 1 cup of salsa in a large saucepan and warm. Dip tortillas in salsa one at a time using tongs and stack them on a plate. Place generous amount of spinach-mushroom filling in each tortilla and arrange in the saucepan, folded side down, overlapping somewhat. Top with remaining salsa and Monterey Jack cheese. Cover handle of pan with foil and broil for 4 minutes. Garnish with sour cream and cilantro.
