This was delicious !! OK, so it was supposed to be Polenta with Tomato - Shiitake Sauce but I had just glanced at the October issue and a couple of days later when I was at the store they had Portobello mushrooms on sale and that is what I bought. Thought that was what the recipe called for ;) .
Anyway, my only experience with Polenta was the kind in the tube and I was not very impressed. Finally found a store that sells beans, grains, and such in bulk so I thought I'd try mushy Polenta. WOW, what a difference compared to the tube stuff!
The only change I made to the recipe (besides the Portobello error!) was to use fresh garlic. Oh, I also drained some of the tomato sauce into the vegetable stock to make 2 cups instead of opening another can.
Very easy and yummy recipe!! Now to go back to previous issues and try other Polenta recipes!
One other thing - the recipe states that it makes 4 servings but I only had a little bit tonight to taste it and it was quite filling. I think you could easily get 5-6 servings IMO.
