I have looked high and low and can not find any mention of a (something)-crusted catfish. I have looked in the recipes and searched in Good Foods. Worse, I then remembered I have the October issue of CL with me, so I go to the index and there is NO mention of this. I could have sworn it was October. Really, I must have dreamed this! Is this familiar to anyone? I wanted to stop at the store and purchase what I don't have at home to make it so ANY help would be wonderful! TIA.

there was a crusted catfish in august though i don't have the recipe...maybe someone else will :)

Crisp-Crusted Catfish

2 tablespoons light ranch dressing
2 large egg whites
6 tablespoons yellow cornmeal
1/4 cup (1 ounce) grated fresh Parmesan cheese
2 tablespoons all-purpose flour
1/4 teaspoon ground red pepper
1/8 teaspoon salt
4 (6-ounce) farm-raised catfish fillets
cooking spray
4 lemon wedges
Preheat oven to 425 degrees.
Combine the dressing and egg whites in a small bowl, and stir well with a whisk. Combine the cornmeal, cheese, flour, pepper and salt in a shallow dish. Dip fish in egg white mixture; dredge in cornmeal mixture.
Place fish on a baking sheet coated with cooking spray; bake at 425 for 12 minutes on each side or until lightly browned and fish flakes easily when tested with a fork. Serve with lemon wedges. Yield: 4 servings. 313 cal, 9.1g fat, 87g pro, 14.3g carb, 87mg chol, 348mg sod.

Thanks for posting this recipe.
I made this last night along with the stewed tomatoes with okra and the fried green tomatoes. It was an awesome meal.

OK, I'm almost embarassed to ask, but how do you know when they're "farm-raised" catfish fillets?

Good Question!! However, I think most are farm raised today. (Or atleast I have assumed they are):rolleyes:
