Anybody got any good caesar salad dressing recipes - would like to try different ones.

Have you tried the caesar salad dressing in the May 2000 CL issue? It is really good! Do you have the issue? I would be happy to post it for you if you need it...

I have to second that recommendation! I assume you mean the creamy ceasar salad toward the back of the May 2000 magazine? I LOVED that recipe and have made it several times.

I'd have to give the "Back to the Best" Caesar Salad recipe from May '00 a big thumbs up! I've never been a huge fan of caesar salad, but I've made this several times now. Instead of using cajun spices, however, I use Old Bay - boy are those croutons addicting!

I am too new at this and cannot seem to get to the recipe and posted/deleted a reply - sorry - but would love that recipe....sorry

Here's the recipe- my favorite caesar dressing! I have never made the croutons for this one.

Creamy Caesar Salad with spicy croutons

Amount Measure Ingredient -- Preparation Method

1 Clove garlic, halved
1/2 cup fat free mayonnaise (or light)
2 tablespoons red wine vinegar
worcestershire sauce
1 teaspoon anchovy paste
1/4 teaspoon black pepper
for croutons
2 teaspoons olive oil
3/4 teaspoon cajun seasoning
1 clove minced garlic
2 cups 3/4 inch sourdough bread crumbs
18 cups torn romaine lettuce
1/3 cup 1 1/2 oz fresh grated parmesan cheese

Drop the garlic halves through the opening in a blender lid with the
blender on; process until minced. Add the mayonnaise and the next 5
ingredients (mayo through black pepper); process until well blended.
Cover and chill at least 1 hour.
Preheat oven to 400 degrees
Combine the olive oil, cajun seasoning and minced garlic in a medium
microwave-safe bowl. Microwave at high for 20 seconds. Add bread cubes;
toss gently to coat. Spread bread cubes in a single layer on a baking
sheet, bake at 400 degrees for 15 minutes or until golden brown.
Place lettuce in a large bowl. Add dressing; toss gently to coat.
Sprinkle with cheese, top with croutons. Yield 6 servings (serving size 2
cups)

Since we are on the subject of Caesar Salad, has anyone ever had "Grilled Caesar Salad"? My husband and I went on a yuppie sea kayaking/wilderness camping trip this summer in British Columbia. The trip had a full time dedicated chef along who spent all day cooking up incredible meals for us back in camp. One night the salad course was a Grilled Caesar Salad. It was so delicious and so easy to do.

You cut a head of romaine lettuce into quarters being careful to keep the leaves of each section attached at the bottom. Place the lettuce quarters onto the grill and drizzle with caesar salad dressing. Grill for 40 seconds, turn the lettuce over, drizzle with more dressing and grill for another 40 seconds. Yummy!! The flavor of the charcoal gets into the lettuce and it is wonderful.

I tried dupicating this at home, but it wasn't as tasty. We have a gas grill so the BBQ flavor did not come through. I think it needs to be done over a charcoal BBQ with some mesquite chips added. I'll have to try it on our next camping trip...

I made the caesar salad from CL 9/98 this year for Father's Day; it was a hit. I think the dressing is kind-of basic, but it worked. I might have substituted low-fat mayo for the fat-free, though. I don't use either enough to warrant having both in my fridge.
