I made the Carmalized Onion & Roasted Pepper Tart for a supper club gathering and it went over very well. I made a few changes. The gathering was on a weeknight and I work outside the home so couldn't do the 2 1/2 hours of crust prep that day. I made it up the evening before and did the 2nd rise in the fridge overnight. My husband made up the topping and put that in the fridge, as well. When I got home from work I took the dough out and flattened it and put it on my oven which I had pre-heating. I decided to cook the tart on my stone since it was rather similar to a pizza (just no sauce or cheese).
I was afraid I'd have a problem rolling out the dough to the proper size since it was still a little cold (sat out for about an hour) but that was fine. It smelled wonderful. It had cooled to room temperature by the time we arrived at the host's home and started eating. I think it would be better warm but it had a nice sweet & flavorful taste. The crust has some whole wheat flour in it and gives it an earthier flavor that goes well with the topping. It had a nice appareance and was good finger food (I was afraid it would be a bit sloppy with no cheese to hold the topping on).
It's a bit of work and not something I'd do regularly, but for a nice meal or a supper club/pot luck where that's all you do for the meal, it is great addition.
You could make this with store-bought pizza dough and even store-bought roasted peppers if you're looking for a quicker way to get this prepared.
