View Full Version : Anyone tried Oprah's Squash Soup?

Oprah's Lemon Thyme Squash soup is great! (Oprah's magazine July/Aug--or probably on her web page as well--oprah.com.)
I had too much summer squash when I bought the magazine so I tried it and loved it. You can taste all the flavors in each bite.
The only thing I would change is to add a couple of chicken boullion cubes to boost the chicken broth flavor a little.
I didn't even know Oprah had a magazine. I just recently learned that she has a book list, but I guess I'm just running a little behind on life. Like everyone esle I knew at the time, I learned anything resembling "skuh-WASH" was YUKKKKEE, but I outgrew it. Now I'm the one who always makes the baked yellow squash, My husband's family looked like they were ready to ask for a divorce one Thanksgiving. I still love it.

Did you use the lemon thyme or the lemon zest and regular thyme? I am going to make this tonight and was wondering if it was just as great doing the latter because I doubt I can find lemon thyme in this neck of the woods!

Oh, is that where the recipe came from? My mother made it and said it was so good she was faxing the recipe to me, since my garden was cranking out summer squash. I couldn't find the name of the magazine on the page.
I made it and thought it was good, but not great, but then I didn't have any Lemon Thyme, or any lemon for that matter. I did enjoy it, but my husband thought it was boring.

I used regular thyme and lemon zest as opposed to lemon-thyme. Also I really liked it with a couple of boullion cubes added.
The fresh lemon zest and thyme lend delicate but intricate flavors.

Oprah's lemon thyme squash soup
Since this was mentioned thought some of you might need the recipe!
Soup is one of Oprah's favorite summer foods. This recipe is featured in the summer 2000 issue of O Magazine — "Summer in a Bowl."
2 tablespoons of extra-virgin olive oil
2 large sweet onions, chopped
1 leek, chopped
6 garlic cloves, chopped
6 yellow summer squash (about 3 pounds), trimmed and coarsely chopped
4 sprigs of lemon thyme (or 4 sprigs of thyme and 2 strips of lemon peel), plus fresh sprigs for garnish
5 cups of sodium-free chicken broth
½ teaspoon salt
2 to 4 tablespoons of fresh lemon juice
Hot pepper sauce
Parmesan cheese, pine nuts and lemon zest for garnish
In a 4-quart Dutch oven, heat the olive oil over medium heat. Add the onions, leek and garlic and cook, stirring, for 10 minutes or until onions are soft. Add the squash and lemon thyme and cook, stirring for 5 minutes. Increase to medium high heat; add the chicken broth and salt. Cook, partially covered, at a low boil for 20 minutes or until the squash is soft. Discard the thyme.
Puree the soup in batches in a covered blender, then return to the Dutch oven and heat through. Add the lemon juice and hot pepper sauce to taste.
Garnish the soup with shaved Parmesan, pine nuts, thyme sprigs and lemon zest. Serve hot.
