I copied this recipe off the BB ages ago and am finally planning to make it tonight. Seeing all of the ingredients on my counter (canned cream of mushroom soup, canned cream of chicken soup, canned tomatoes, etc... is making me a little hesitant. Has anyone tired it? I would welcome reviews.
I am planning to replace the corn tortillas on the bottom with crushed Tostitos Lime Tortilla chips as me and my DH don't care for corn toritllas. Think this will work okay??

The 2 cans of cream soup sound like the traditional King Ranch Chicken to me (although I always used the reduced fat soups). It's good, but if you want something lighter, I posted a Not Really King Ranch Chicken that I adapted from another variation. I like them both, but the Not Really has less fat, more veggies and is simpler to put together, so that's what I make now. If you want to try it, here it is:
Not Really King Ranch Chicken
1 pounds cooked chicken -- shredded or diced
1 15 oz. can diced tomatoes
1 4 oz can chopped green chilies
1 percent fat free cream of mushroom soup -- ¥condensed
1 can black beans -- (15 oz)
1 can whole kernel corn -- drained
1/2 pkg chicken taco seasoning -- or 2 T taco seasoning and 1/2 tsp each onion and garlic powder
10 corn tortillas -- torn into 1 inch peices
1/2 cup cheese -- grated
Preheat oven to 350 degrees.
Combine chicken, tomatoes, soup, beans, corn taco seasoning and tortillas in a deep casserole dish of 13x9 inch pan. Mixture should be thick but still soupy. Top with grated cheese.
Bake 45 to 60 minutes until hot and bubbly.
Micowaving mixed canned goods until hot, then adding chicken, taco seasoning and tortillas before pouring into pan and topping with cheese will cut baking time in half.

I finally got around to making the Not Really King Ranch Chicken last week. I thought it was really good. The only thing I did differently was to use a can of kidney beans instead of the black beans (didn't want to stop by the store!). The recipe was easy to put together, and makes a good weeknight dinner.

Ooooh, I will print out that Not Quite Recipe, as I am roasting a chicken right now (Barefoot Contessa recipe... hope it's good) and I anticipate leftovers. Thanks. Martha
