I recently attended a German festival and I tried German potato salad for the first time and it was wonderful. I have never seen a recipe for it so if anyone knows of one would you please post it! Oh yes and if you haven't tried this you would love it!

Being German, we eat this all the time. But I will confess that we mostly buy the pre-made stuff from the deli at the grocery store, because the way they make it is much lower in fat than the "real" German version. The real version is made with a lot of bacon drippings, and is just too unhealthy for me to eat on a regular basis, although when we're in a German restaurant or at a Fest, I will definitely eat it!

I would imagine that Epicurious has a good recipe for the "real" stuff, but I will post an old CL recipe for a lightened version, which I have never tried. If you do try it, would you please post a review and let me know if it's worth making? Thanks, and good luck!

German Hot Potato Salad
Cooking Light May 1994

8 cups (1/4-inch) sliced unpeeled round red potato (about 2-1/2 pounds)
2 tablespoons minced fresh parsley
1/2 teaspoon celery seeds
Vegetable Cooking Spray
4 slickes turkey bacon, minced
1 cup chopped onion
2-1/2 tablespoons all-purpose flour
1/3 cup plus 1 tablespoon cider vinegar
1 tablespoon sugar
1/4 teaspoon pepper
1 (10-1/2 ounce) can beef broth

Place potato in a Dutch oven; cover with water, and bring to a boil. Cook 8 minutes or until tender. Drain and place in a large bowl. Sprinkle with parsley and celery seeds; set aside.

Coat a medium nonstick skillet with cooking spray; place over medium-high heat until hot. Add bacon, and saute 3 minutes or until crisp. Add onion, and saute 3 minutes or until tender. Add to potato mixture.

Place flour in a small bowl. Gradually add vinegar, stirring with a wire whisk until blended; set aside.

Combine sugar, pepper and broth in skillet. Bring to aboil, and cook 2 minutes. Add flour mixture to skillet, and cook 3 minutes or until thickened (mixture will reduce to about 1 cup). Pour over potato mixture, and toss gently to coat. Serve warm.

Yield: 7 servings (serving size: 1 cup)
