Just a thought-what about making a soup using the vegies?

Hi Leslie,
You could use them in a potpie (there were some recipes that you could use or adapt in Cooking Light a few months ago).
They could also be used in an Indian rice pilaf (pullao).
Another idea is to cook them with a bit of curry paste (Patak brand, for example) and a smidgen of oil and have them as an easy side dish, with fresh coriander and yogurt if desired. In fact, you could sneak them in a lot of curry main and side dishes.
A stir-fry is another option. If you toss them in with some fresh veggies and a good sauce, you may not really notice them.

Hi everyone,
You all always seem to have such great ideas so I have a challenge for you.
A couple of months ago I bought a great BIG bag of frozen green and yellow beans with carrots at Costco. I have tried cooking them as a side dish but I don't like them. I am tempted to just throw the whole thing out as it is taking up way too much space in my freezer, but before I do I thought I'd post here and see if anyone has any ideas on how I can use them up and make something that actually tastes good and is still healthy?

I'll take a stab...
Why don't you heat a little olive oil in a non-stick skillet, saute some garlic and minced ginger, throw in the vegetables and saute. Reduce the heat to low, sprinkle low-sodium soy sauce liberally, cover and cook till tender. (You can add water or a little chicken broth to help steam the vegetables.

Last summer CL had a recipe for oven-roasted green beans (green and/or wax, I think) that also had slivered almonds. It was quite good. I think the carrots would be a good addition. Let me know if you need the recipe.

I second Susann's suggestion. Throw them into soup - I do this with all my extra veges (you know, all those bags in the freezer that don't have quite enough for even one serving).
I have also been known to put them in the blender and add them to tomato sauce - a little extra vitamins & veges in dinner and no one even notices.

Have you thought about having rice and veggies with soy sauce? This is an easy one that we make a lot during the winter. Just steam the veggies and cook some rice and throw that all together with a little soy sauce and it tastes really good. Oh yeah and it's low-fat also!
