Andrea, I made the Carmelized onion, spinach and feta quiche from last month and it was great! The whole family liked it http://www.cookinglight.com/bbs/smile.gif I used a frozen prepared crust instead of making my own, which made it a little easier. Let me know if you need me to post the recipe.

I made the Carmelized onion, bacon and spinach quiche for brunch get-together of our "supper" club. Everyone agreed it was very good. I did make my own pizza dough in the breadmaker instead of using the store-bought refridgerator kind, though.
This recipe is available in the recipe finder on this website.

Here's a very basic recipe that you can use as a spring board for just about any quiche. I use it all the time.
3/4 cup lowfat mayonnaise
1 cup skim milk
3 tbsp flour
1/2 cup egg substitute
8 ounces low fat cheese
1 package frozen vegetable
Boil veggie slightly and drain well. Place in an uncooked pie crust. Add grated cheese. Blend mayonnaise, milk, flour and egg substitute in blender or food processor until smooth. Pour into pie crust. Bake at 350 F for 45 minutes or until lightly browned and set.
You can use any veggies or meats you like and any cheese. This also freezes well so I tend to double the recipe and stick the second in the freezer.

Bev- Do you use shredded cheese or some other variety? Also do you add another pie crust on top? By the way this sounds easy and delicious. Thanks to everyone for the help.

Boy I hope I spelled that right! I am looking for some quiche recipes and haven't found a good one yet. If anyone knows of a good light quiche recipe will you please post it. Thanks

I have a WONDERFUL recipe my sister turned me on to. It's an Italian Onion Torta. It's so delicious. Unfortunately, it's not really low fat, although as we all do, you could reduce it by using more egg whites or egg beaters, etc. It's a wonderful side dish also. Let me know if it interests you and I'll post the recipe.
